KIM'S LEFTOVER ROAST SUB SANDWICHES

This is something i like to do with leftover beef or pork. If you don't have any juices for dipping, use some broth and spice it up a little.

Kim's Leftover Roast Sub Sandwiches image

Steps:

  • Shred the meat. Brown some onions in a little oil or butter.
  • Slice up some banana peppers, and heat the juice up in a sauce pan.
  • Open up the sub bun and place a slice of provolone on the bun. Layer the meat, onions, and banana peppers on the sub bun.
  • You can microwave if you like, but i prefer to warm the subs in a 4oo degree oven for a few minutes.
  • Place the juice in some saucers, and dip the sandwiches in the juices.

16 ounces leftover shredded cooked beef (or more) or 16 ounces cooked pork (or more)
4 slices provolone cheese
4 banana peppers, sliced
1 vidalia onion, sliced
8 ounces leftover pan juices or 8 ounces broth
4 submarine buns
1 tablespoon oil or 1 tablespoon butter

Looking for something different to do with your leftover beef roast? Here is an easy sandwich. My Mom used to make this all the time when I was younger & my siblings & I loved it. I've never measured this, so everything is approximate. You can easily adjust this to make more or less, depending on the amount of meat that you have.

Steps:

  • Put the your leftover roast in a meat grinder or food processor, grind until into small pieces.
  • Put meat in a bowl and mix in all ingredients.
  • Spread on bread & serve.

1 cup roast, ground up
1/4 cup light mayonnaise
1/2 teaspoon yellow mustard
2 teaspoons sweet pickle relish

  • In the meantime, heat the oil in a non-stick skillet over medium low heat. Add the onion slices and toss to coat with the oil. Cook for 20-30 minutes, stirring occasionally, until the onions are soft and golden brown.
