LOW CARB BALSAMIC CHICKEN
I haven't tried this recipe yet,it looks good to me. I'm trying more low carb recipes,and decided to put a few of them in here,so I could keep track of them,and other low carbers can try them!

Steps:
- Rinse and dry chicken.
- Mix all seasonings in small bowl.
- Place chicken in large bowl.
- Drizzle chicken with olive oil and rub with seasoning mix.
- Cover and refrigerate overnight.
- Preheat oven to 450 degree.
- Spray heavy roasting pan with cooking spray.
- Place chicken in pan, bake 10 min.
- Turn chicken over,stirring in 3 to 4 Tbs.
- water,if drippings stick.
- Bake 10 more min.
- If pan is dry,stir in 1 to 2 Tbs.
- water to loosen drippings.
- (I'd cook this chicken longer,at least 30 min. total.) or until chicken is browned,and no longer pink in center.
- Drizzle Balsamic over chicken in pan.
- Transfer chicken to large plate.
- Stir pan drippings,drizzle over chicken.

LOW CARB SWEET AND SOUR CHICKEN
The secret to this wonderful recipe is the orange soda! Serve with sauteed chinese vegetables or steamed bok choy. Pork may be substituted for the chicken.

Steps:
- Brown chicken and onions in a non-stick pan sprayed with cooking spray.
- When chicken is brown, add the remaining ingredients.
- Cover and simmer for about 20 minutes until the chicken is tender and thoroughly cooked.
- Uncover and reduce liquid until it makes a syrupy sauce.
- A little arrowroot powder may be added to thicken the sauce, if desired.

LOW CARB CHICKEN AND VEGGIES
I had cooked chicken in the freezer and wanted something pasta-like without boiling pasta. I make this every couple weeks and the leftovers heat up nicely for lunches.

Steps:
- Slice thinly the cabbage, onion and pepper.
- Heat a large heavy frying pan under medium high heat with about 1 tbsp butter and 1 tbsp oil. (I use regular olive oil).
- Put in the vegetables and stir occasionally to prevent sticking.
- Once they start to fry turn down the heat somewhat.
- Add the frozen spinach and cover to let steam.
- Chop the cooked chicken and the cream cheese into cubes.
- Once the vegetables have softened, add the chicken, cream cheese.
- and the cream or chicken broth or both!. Keep the cover on.
- Stir fairly frequently for about 5 minutes or until the cream cheese is melted. Do not boil.
- Season to taste with salt and pepper.

BALSAMIC CHICKEN AND MUSHROOMS

Steps:
- In a nonstick skillet, heat 1 teaspoon of the oil.
- In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic.
- Add the chicken and coat both sides with the mixture.
- Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
- Transfer to a plate and keep warm.
- In the skillet, heat the remaining teaspoon of oil.
- Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar.
- Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
- Serve the chicken, topped with the mushrooms.

- Heat the olive oil in a large frying pan. Add the chicken tenders to the hot pan and sprinkle with the salt and pepper. Cook for about 4 minutes on each side until they are 160 on a meat thermometer. Transfer to a serving platter.
