Steps:

  • If needed, cut steaks into serving size pieces.
  • Combine flour, salt, pepper, and garlic salt in a pie plate or shallow bowl, Combine eggs and milk in another shallow bowl.
  • Dredge steaks in flour mixture, dip in egg mixture, and then dredge back in flour mixture.
  • Lightly pound steaks.
  • Heat about 1 inch of oil in a frying pan to medium heat (375 degrees).
  • Fry steaks in hot oil until browned, turning once.
  • Reserve 1/4 cup of pan drippings for gravy.
  • For Gravy: In heated pan drippings, stir in 1/4 cup flour.
  • Cook over medium heat until bubbly, stirring constantly.
  • Gradually add milk and cook until thickened and bubbly, stirring constantly.
  • Add salt and pepper.
  • Serve steaks with a ladle of gravy.

  • mix beef onion powder parsely chili powder if you want eggs and 1 cup of the cracker crumbs
  • mix well.
  • divide mixture into 8 balls
  • sprinkle rest of cracker crumbs on board
  • put pattties on these and roll out thin
  • be sure each side is well coated with crumbs
  • put on wax paper and chill 30 minutes or may be frozen brown on both sides then put in oven to keep hot.

You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

  • Mix 2 cups flour with salt and pepper.
  • Shape ground beef into four thin patties.
  • Dip patties into flour, then beaten egg, then flour again.
  • Put shortening, oil or lard into a heavy skillet over medium high heat.
  • When a little flour sprinkled into skillet begins to sizzle, add patties.
  • Cook for about 5 minutes per side.
  • Remove and drain on paper towels.
  • To make gravy:.
  • Remove all but four tablespoons of fat from skillet.
  • Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
  • Stir, scraping up browned bits, for about one minute till light brown.
  • Whisk in milk gradually.
  • Whisk until thick and bubbly.
  • Remove from heat.
  • Add 1/2 teaspoon black pepper or to taste.
  • Stir well.

Steps:

  • Cut the flank steak into four equal portions, crosswise. Using a meat mallet, pound out the steak, about 1/4-inch. Season with salt and pepper.
  • Season 2 cups of the flour with salt and pepper. Dredge the steaks in the seasoned flour.
  • Dip the steaks in the egg wash, letting the excess drip off.
  • Dredge the steaks in the seasoned flour, coating each side completely.
  • Add enough oil to a large skillet to fill about 1/4-inch of the pan. Heat the oil. When the oil is hot, carefully lay the steaks in the hot oil.
  • Pan-fry the steaks for 3 to 4 minutes on each side, or until golden. Season with salt and pepper.
  • In another skillet, render the bacon until crispy, about 3 to 4 minutes.
  • Add the onions and continue to saute for 2 to 3 minutes.
  • Stir in the remaining 1/2 cup of flour and continue to cook for 2 minutes. Season with salt and black pepper.
  • Whisk in the milk and bring the liquid to a simmer, cook the gravy for 3 to 4 minutes. If the gravy is too thick add a little more milk and if too thin, cook a little longer.
  • Remove from the heat and season with salt an black pepper.
  • Spoon the gravy over each steak.

  • Trim steak and pound, if needed, to 1/2 inch thick; cut into 6-8 pieces.
  • Combine evaporated milk, Tabasco jalapeno sauce and 1/2 teaspoon salt in a bowl.
  • Measure 1 cup of flour into a second bowl.
  • Combine remaining flour, paprika, garlic powder, salt and pepper in another bowl.
  • Dip steak into flour, into milk mixture, and then into seasoned flour (repeat this process for an extra thick coating).
  • Set aside until all meat is coated.
  • Heat 1 or 2 inches of oil in a heavy fry pan.
  • Fry meat until both sides are golden brown, about 2 minutes per side.
  • Drain on paper towels.
  • Serve with cream gravy.
  • Cream Gravy:
  • Pour off all but about 6 tablespoons of fat from fry pan; add 6 tablespoons flour into pan (use leftover seasoned flour) and blend well.
  • Allow the flour 'paste' to brown slightly over medium heat for 2 or 3 minutes.
  • Gradually stir in 2-1/2 cups milk.
  • Simmer and stir over medium heat until thickened.
  • Season with salt and pepper.
  • Cover steaks with gravy when served.

Chicken Fried Steak With Mushroom Gravy image

Steps:

  • Mix flour, breadcrumbs, parmesean cheese, and seasonings in a bowl.
  • Dip steaks into a small amount of milk and then dredge in the flour mixture.
  • Place 3-4 tablespoons of olive oil in frying pan over medium-high heat.
  • Cook steaks for 5 minutes on one side (cooking time depends on thickness of steak).
  • The juices from the steak might soak up the flour, so before you flip the steaks add some more of the flour mixture, patting it down with a spatula.
  • When brown, flip over and continue to cook for another 3 mintues (again cooking time varies).
  • When finished cooking, remove steaks and keep warm.
  • FOR GRAVY:.
  • Once steaks are finished cooking add a small amount of oil (most of oil, if not all, will have been used in cooking the steaks) and cook the mushrooms.
  • Add 1/4 water, salt&pepper, and continue cooking.
  • Make sure to get all of the scraps from the sides of the pan that the steaks left into the liquid you are cooking the mushrooms in.
  • When most of liquid is cooked off, sprinkle remaining flour over mushrooms and cook for 1 minute.
  • Add milk and cook until thickened to your liking.
  • Serve with mashed potatoes and enjoy!

  • Pound steak to 1/4" thick or ask butcher to tenderize; cut into 6 pieces, if using round steak.
  • Beat eggs and water together in pie plate.

  • Pound the steaks to about 1/4-inch thickness. Place 2 cups of flour in a shallow bowl. Stir together the baking powder, baking soda, pepper, and salt in a separate shallow bowl; stir in the buttermilk, egg, Tabasco Sauce, and garlic. Dredge each steak first in the flour, then in the batter, and again in the flour. Pat the flour onto the surface of each steak so they are completely coated with dry flour.
  • Heat the shortening in a deep cast-iron skillet to 325 degrees F (165 degrees C). Fry the steaks until evenly golden brown, 3 to 5 minutes per side.
