Steps:
- Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain the pasta, reserving about 1/2 cup of the pasta water.
- In a large saute pan, heat the oil over medium-high heat. Add the garlic and cook until fragrant, about 1 minute. Add the asparagus, season with the salt and pepper, and cook for 3 minutes until slightly soft. Add the cherry tomatoes and peas. Cook for 2 minutes. Pour the chicken stock into the pan and bring the mixture to a simmer. Cook until the tomatoes start to burst and the stock is reduced by half, about 3 minutes.
- Transfer the asparagus mixture to a large serving bowl. Add the cooked pasta and 1/2 of the Parmesan. Toss well, adding reserved pasta water, if needed, to loosen the pasta. Garnish with the remaining Parmesan and chopped basil.

ASPARAGUS WITH TOMATOES
This is a delicious way to take advantage of early spring's flavorful asparagus. A great dish to accompany large, busy meals, as most of the work can be done ahead of time and the asparagus reheated with the tomatoes and garlic at the last minute while the roast (or whatever else) is resting. Also a delicious preparation for green beans in place of the asparagus.

PESTO PASTA WITH SPINACH, ASPARAGUS, AND CHERRY TOMATOES
Dr. Travis Stork's said it's ok to have a glass of wine with this meal. If I recall he may have suggeted red. I found this recipe on the Rachael Ray Show. The recipe came from Dr. Travis Stork's. Made this for my families dinner! My hubby loved this, my newphew and I liked it. When I made this I opted to used store prepared Pesto, so I added minced garlic to my veggies. For the pasta I used Wegman's whole grain pasta, I used fresh snap peas in place of the asparagus. I used the spinach and opted to add the cooked chicken. I did add alot of shredded Parmesan cheese maybe 5oz or less. Plus I did add some Sea Salt for flavor.

ASPARAGUS PESTO WITH TINY POTATOES AND PASTA

Steps:
- Pesto:
- Cut the cooked asparagus spears into thirds. Put in a food processor with the basil, pine nuts, garlic, and salt and pepper, to taste. Keep in mind you will add Parmesan as well, so be careful not to oversalt. With the machine running, slowly add the cup of olive oil. When the sauce is about the consistency of mayonnaise, it has enough oil. Pulse in the Parmesan. Thin with water if necessary to achieve a slick, saucy pesto. Scrape into a bowl or jar, cover, and refrigerate until needed. You should have about 3 cups. (Keeps about 2 to 3 days, refrigerated.)
- Put the potatoes in a pan of salted cold water to cover and bring to a boil. Cook until tender, about 10 minutes. Drain and let cool for a few minutes. If the potatoes are larger than about 1/2 inch in diameter, cut in half.
- Heat the olive oil in a medium saute pan over medium-high heat until hot. Add the potatoes and cook until browned and crispy all over, about 5 minutes. Season, to taste, with salt and pepper. Keep warm. Add basil, toss with potatoes and set aside.
- While the potatoes are browning, return the water used for cooking the asparagus, if reserved, to a boil or brint a new pot of water to a boil. Add more salt and the pasta and cook until al dente, about 12 minutes. Drain through a colander, reserving about 1/2 cup of the pasta cooking water. Pour the pasta into a warm serving bowl, add the potatoes, about 1 cup of the asparagus pesto, several twists of pepper, and 1/4 cup of the Parmesan. Toss well, thinning with the pasta cooking water as necessary.
- Dust with a light grating of Parmesan (a microplane grater works well for this) before serving and pass the remaining cheese and a bowl of pesto at the table.

POLENTA STEAKS WITH ASPARAGUS PESTO, CHERRY TOMATOES AND BURRATA
This looks and sounds fussy; the burrata, asparagus and pignoli can be a bit pricy, but make this relatively budget-friendly dish look much more expensive-looking than it really is. This recipe is adapted from a reprint by Caroline Russock at Serious Eats; it is originally from _In the Small Kitchen_ by Cara Eisenpress and Phoebe Lapine. http://bit.ly/l4UWxY

Steps:
- Butter a 9×13-inch baking dish, and set it aside.
- In a large Dutch oven or stockpot, bring the water and milk to a boil. Add the polenta in a gentle stream, whisking as you pour. Reduce the heat to medium-low and continue to whisk the polenta until it has thickened, about 10 minutes. Add the butter and salt, and continue to whisk until most of the liquid has evaporated, about 3 minutes. Pour the polenta into the prepared baking dish, and smooth it with a spatula to make an even layer. Cover with plastic wrap and chill in the refrigerator for 2 hours or up to 2 days.
- Preheat the oven to 450°F Cut the polenta into 12 rectangular "steaks," and pat each one dry with a paper towel.
- Brush both sides of each polenta steak with olive oil. Place the steaks on a baking sheet and bake in the oven for 30 to 40 minutes without turning, until the tops have browned.
- Meanwhile, prepare the pesto: Bring a pot of heavily salted water to a boil. Blanch the asparagus in two batches until bright green and just tender, 1 to 2 minutes. Use tongs to transfer the asparagus to an ice bath, or put them in a colander and rinse under cold water. Drain.
- Cut the asparagus into 1-inch pieces. Put 2 cups of the stalk pieces in a small food processor, reserving the tips. Add the mint, garlic, lemon juice, pine nuts, olive oil, and salt, and pulse. Add 1/3 cup water, and pulse until the mixture has the consistency of pesto. Mix in the Parmesan, and taste for seasoning.
- Place the reserved asparagus tips in a mixing bowl, and toss with the tomatoes, burrata, olive oil, and salt.
- To serve, place a warm polenta steak in the center of each plate, and top it with a generous dollop of pesto and a spoonful of the cherry tomato topping.
