Steps:

  • Place the carrots into a large pot and cover with salted water. Bring to a boil over high heat until tender, about 15 minutes. Drain and allow to steam dry for a minute or two.
  • Return the pot to the stove; reduce the heat to medium-low. Melt the butter in the pot. Stir in the honey and brown sugar; add the carrots and stir until evenly coated; cook another 5 minutes

Pineapple Juice/Brown Sugar Glazed Baby Carrots image

Steps:

  • Put carrots in a medium sauce pan, put enough water in pan to just cover the carrots.
  • Turn heat to high and boil the carrots for about 5 minutes (or until heated through, while retaining their crispy texture). Drain and place in serving bowl.
  • Meanwhile, in a small saute pan, over medium heat, melt butter, add sugar, pineapple juice and the ginger. Bring mixture to a light boil and stir until sugar has melted and incorporated into all the other ingredients.
  • Pour mixture over the carrots and toss gently.

Steps:

  • Preheat the broiler. Remove skin and "eyes" from pineapples and slice into 3/4-inch rounds; remove core if you wish or just thickly coat each slice with a layer of brown sugar. Set slices on a broiler pan.
  • Place the pan under the broiler as close to the heat as possible and broil until the sugar is caramelized, about 3 minutes keep your eye on the pineapple to make sure it does not burn.
  • Remove slices from the broiler pan and set on plates; garnish with drops of port wine if you wish.

Steps:

  • In a large saucepan combine 1 1/4 cups (reserving 1/4 cup) of the pineapple juice and the sugar. Bring to boiling; add apple wedges. Simmer, covered, 3 to 4 minutes or till apples are tender but not soft.
  • With slotted spoon, lift apples from pineapple liquid; set apples aside to drain.
  • Blend the remaining 1/4 cup pineapple juice slowly into cornstarch; add to hot pineapple liquid in saucepan. Cook and stir till mixture thickens and bubbles; cook 1 minute more. Remove from heat.
  • Stir in the butter, vanilla and salt. Cover and cool 30 minutes without stirring. Pour HALF the pineapple mixture into the baked pie shell, spreading to cover bottom.
  • Arrange cooked apples on top. Spoon remaining mixture over apples. Cover and refrigerate till chilled.
  • Before serving, garnish center of pie with whipped cream and chopped macadamia nuts, if desired.
