- Sprinkle pork chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In a large skillet, heat oil over medium heat. Brown pork chops on both sides; remove from pan., Add apples, mushrooms and onion to the skillet; cook and stir 4-5 minutes or until tender. Stir in rice, broth, vinegar, thyme, and remaining salt and pepper. Bring to a boil. Reduce heat; cook, covered, 5 minutes., Place pork chops over top; cook, covered, 4-6 minutes or until a thermometer inserted in pork reads 145°. Let stand 5 minutes before serving.

- Sprinkle roast with salt and pepper. In a large skillet, brown roast in oil on all sides; cool slightly. With a paring knife, cut about sixteen 3-in.-deep slits in sides of roast; insert one apple slice into each slit., Place half of the remaining apples in a 4-qt. slow cooker. Place roast over apples. Drizzle with honey; top with onion and remaining apples. Sprinkle with cinnamon., Cover and cook on low for 6-8 hours or until meat is tender. Remove pork and apple mixture; keep warm., Transfer cooking juices to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Serve with pork and apple mixture. - Combine gravy, raisins, honey and spices.
- Heat oil in large skillet on medium-high heat. Add chops; cook 1 min. on each side or until lightly browned on both sides. Season with pepper.
- Pour gravy mixture over chops; cover. Cook on medium heat 10 to 15 min. or until chops are done (145ºF). Transfer chops to platter, reserving gravy mixture in skillet. Cover chops to keep warm.
- Add apples to gravy mixture; stir. Cook, covered, 5 min. or until apples are tender, stirring occasionally. Spoon gravy mixture over chops. Serve with rice.

- Preheat the oven to 400.
- Lay pork chops on a baking sheet, lightly coat with olive oil, then thyme, and sea salt and pepper to your liking. Rub the seasonings into the meat and set aside.
- In a sauce pan, combine the brown sugar, cinnamon, nutmeg, water and apples. Bring to a boil, and then simmer for 20 minutes or until apples are tender. Combine the flour with a tablespoon of cold water to dissolve. Add flour mixture to the apples and return to a boil for 5 minutes or until sauce begins to thicken. If the mixture becomes too thick, you can add more water, and likewise, if it's too thin, you can add more flour-water.
- Place porkchops in the preheated oven and bake for 20 minutes. Top the chops with the apples and return to baking for another 10 minutes.
- This is great with steamed green beans, and is a healthy alternative to other apple pork dishes.
