ROSEMARY RACK OF LAMB WITH EASY TZATZIKI
Steps:
- Place the rosemary, garlic, oregano, 1 tablespoon salt, and 1 1/2 teaspoons pepper in a food processor and process until minced. Add the olive oil and process into a coarse paste. Place the lamb on a sheet pan with the rib ends pointing down and spread the paste evenly on top of both racks. Cover and refrigerate for at least 6 hours.
- When ready to cook, preheat the oven to 450 degrees F.
- Roast the lamb for 25 minutes exactly for medium rare and 30 minutes for medium. Remove from the oven and cover the pan tightly with aluminum foil. Allow the lamb to rest for 15 minutes. The internal temperature should read about 140 degrees when an instant-read thermometer is inserted sideways into the center of the lamb. Slice between the ribs into individual chops and serve hot or warm with Easy Tzatziki.
- Grate the cucumber by hand on a box grater, as you would grate carrots. Squeeze the cucumber with your hands to remove a lot (but not all) of the liquid. Place in a medium bowl and stir in the yogurt, sour cream, lemon juice, vinegar, dill, garlic, 2 teaspoons salt, and 1/2 teaspoon pepper. Serve cold or at room temperature.
RACK OF LAMB WITH GARLIC AND HERBS
Steps:
- Brown lamb:
- Heat a dry 12-inch heavy skillet over high heat until hot, at least 2 minutes. Meanwhile, pat lamb dry and rub meat all over with salt and pepper. Add oil to hot skillet, then brown racks, in 2 batches if necessary, on all sides (not ends), about 10 minutes per batch.
- Transfer racks to a small (13- by 9-inch) roasting pan.
- Coat and roast lamb:
- Put oven rack in middle position and preheat oven to 350°F.
- Stir together garlic, herbs, salt, pepper, and oil. Coat meaty parts of lamb with herb mixture, pressing to help adhere. Roast 15 minutes, then cover lamb loosely with foil and roast until thermometer inserted diagonally into center of meat registers 120°F, 5 to 10 minutes more. Let stand, covered, 10 minutes. (Internal temperature will rise to 125 to 130°F for medium-rare while lamb stands.)
- Cut each rack into 4 double chops.
CRUSTED FRESH HERBED RACK OF LAMB WITH POTATO LEEK GRATIN AND ROASTED GARLIC SAUCE
Steps:
- For the Gratin: Preheat the oven to 350 degrees F.
- Slice the potatoes into 1/4-inch slices. Slice the leeks into thin circles. Mix the butter and the garlic together and set aside. Season the cream with salt, white pepper, and nutmeg. Layer the potatoes, the leeks, the garlic butter, and then the cream, alternating until the potatoes are lightly covered with the cream. Bake for 30 minutes.
- For the Lamb: Sear the lamb in olive oil in a roasting pan until golden, fat side down first. Remove and allow to rest for 5 minutes. Brush the mustard onto both sides of the seared lamb. Season with salt and pepper. Mix together all of the herbs. Dredge both sides of the lamb in the herbs, pressing lightly so the herbs adhere. In the same roasting pan the lamb was cooked in, add the 20 cloves of garlic and place the lamb on top. Cook in the oven for 15 minutes or until medium-rare. When cooked remove the lamb from the roasting pan and wrap in aluminum foil to rest.
- Place the roasting pan on top of the stove over medium heat. Remove the garlic and set aside. Discard all the fat. Add the thyme, white wine, and the stock and reduce by half.
- Place half of the roasted garlic in a blender. Add the reduced stock and wine mixture and puree until smooth. Add the tablespoon of butter and pulse to incorporate. Season with salt and pepper.
- To Serve: Place a large scoop of the gratin in the center of a plate. Slice the lamb every two chops and place on top of the gratin. Pour the sauce over the lamb and garnish with the remaining roasted garlic and your favorite seasonal vegetables.
LEG OF LAMB WITH GARLIC SAUCE
This lamb is fabulous! Dont let the amount of garlic scare you away...it cooks up very nicely. I made this lamb last week and roasted perfectly, it was absolutely fantastic. I adapted this recipe slightly from a cookbook called "Mediterranean, The Beautiful Cookbook". Delicious!

Steps:
- Preheat oven to 350 degrees.
- Make shallow slits all over lamb and insert garlic slivers into slits.
- Rub lamb with oil and rub with salt, pepper, thyme and rosemary.
- Place lamb in roasting pan on a rack.
- Roast lamb for about 1 hour and 20 minutes, or until temperature reaches 140 degrees when thermometer is inserted for medium rare, or longer if you like it more well done.
- You may want to check it early to ensure not to overcook.
- Remember lamb will continue to cook while it rests.
- While the lamb is roasting, combine the whole garlic cloves, 1/2 cup wine and 1/2 cup broth over medium high heat.
- Bring to a boil, reduce heat to medium low and simmer until garlic cloves are very soft when tested with a fork, about 15 to 20 minutes.
- Transfer to a blender or food processor and puree until smooth.
- When the lamb is done, remove to a platter and tent with foil.
- Add the garlic puree to the juices in the roasting pan and heat on the stove top.
- (If using a pan that is not stove top safe, combine the juices and the garlic puree in a small saucepan to heat).
- Add additional broth if needed to thin to your liking.
- Adjust the seasonings at this point if needed.
- Carve the lamb and serve with garlic sauce on the side.

Steps:
- Preheat oven to 500 degrees.
- Open up boned racks, fat side down. Arrange slices of garlic along base of the main meat portion. Roll flap around the main meat portion to enclose garlic neatly. Tie each rolled-up rack with string in several places.
- Heat heavy oval baking dish large enough to hold tied racks plus chopped bones. Add oil and rolled racks. Scatter bones all around. Brown meat on all sides over high heat. Transfer dish to oven and bake 12 minutes.
- Scatter carrot, onion, thyme and shallot around lamb and continue cooking 5 minutes. Remove racks and cover with foil to keep warm.
- Carefully pour fat from pan. Place pan atop stove. Add pureed shallots and onions and cook briefly, stirring. Add wine and water and bring to boil over high heat, stirring occasionally. Cook 5 minutes. Strain sauce into saucepan and bring to boil. Swirl in butter.
- Meanwhile, prepare tomatoes for garnish. Drop tomatoes into boiling water and let stand 12 seconds. Drain and peel. Cut each tomato into 6 wedges of equal size. Cut away pulp and seeds of each wedge, leaving only outer shell. Warm these shells briefly without cooking in microwave or regular oven.
- To serve, cut meat into inch thick slices.
- Spoon equal portions of woodland sauce onto each of 6 warmed plates. Unmold zucchini cake in center of sauce. Surround zucchini cake with slices of lamb. Spoon hot pan sauce over lamb. Garnish each serving with 3 warmed tomato wedges and 2 sprigs of watercress.
