RICE A RONI W/ SAUSAGES
This looks like a lot of steps but it's really easy and they are necessary to turn out right...the whole process takes about 30 minutes. The butter will brown (not burn), the onions will sweeten, the green beans will fry and the sauce will carmalize nicely. DELICIOUS

Steps:
- 1. put stick of butter in large pan or electric skillet and turn to medium heat
- 2. While butter is melting, chop onions and add to skillet
- 3. Drain green beans and add to onions and butter.
- 4. Slice sausages into rounds and layer on top of onions and green beans.
- 5. DO NOT STIR.. Get a good fry going in that pan..you want to brown the butter but not burn it. Also very important..you are looking to actually FRY the green beans..it changes the whole flavor of them.
- 6. When the vegies are about half way cooked through.. -Stir -place a lid on the pan -turn heat down to medium.
- 7. When the vegies are cooked through and the sausages are about half cooked through.. -remove the lid -turn the heat back up to medium high -move the food to the edges of the pan creating a well in the center -pour the rice from both boxes into the well in the center of the pan. Stir the rice in the center 2 or 3 times coating the rice grains with oil ..I would say to 'brown' them but they will actually turn white/opaque. Don't burn the rice.
- 8. Stir it all up together Add the seasoning packets from the rice boxes Cover with water to just above the rice.
- 9. Bring to a good boil and cook for 3-5 min. Stir
- 10. Turn the heat to low. Cover with a lid. Walk away...
- 11. When the rice absorbs the liquid it is ready.

- In a skillet, cook sausage, onion and celery over medium heat until meat is no longer pink and vegetables are tender; drain. Add tomatoes, water rice and chili sauce. Cover and cook over low heat for 30 minutes or until rice is tender. Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted.

- 1. Break noodles into 1/2" or 1" size pieces. (They don't have to be perfectly uniform.) In a non-stick skillet, lightly brown (but don't burn) the dry noodles in melted butter. Add chicken broth and bring to a boil.
- 2. Add rice to boiling liquid and mix together. Mixture should boil for a minute or so.
- 3. Next: add can of crushed tomatoes, onion salt, garlic powder and tabasco (if using) to taste. Bring to a boil again for a moment.
- 4. Lower heat and cover pan; simmer for about 25-30 minutes or until liquid is absorbed and almost gone. (You want to stir everything really good when you first put the lid on, but try not to resist the temptation to stir it too much during the simmering period. Just make sure your heat is pretty low.) If liquid does not get completely absorbed during cooking time, just leave lid on and simmer five or ten more minutes or until the liquid is fully absorbed.
- 5. Wait about 10 minutes, remove from heat and let stand for a few minutes. Sprinkle a few dashes of pepper on top and serve.
RICE-AH-RONI
Here's my version of what's often called 'the San Francisco treat,' although the next time I see this served here will be the first time. I used real chicken broth and a variety of seasonings.

Steps:
- Mix together salt, pepper, coriander, mustard powder, celery salt, paprika, turmeric, and cayenne pepper in a small bowl.
- Melt butter in a large skillet over medium-high heat. Add diced onion and pasta. Cook and stir until onions soften and pasta turns golden brown, 4 to 6 minutes. Stir in spice blend; cook and stir about 30 seconds. Add rice and stir until rice is coated with butter, about 1 minute.
- Pour in chicken broth. Bring to a simmer. Stir; reduce heat to low. Cover with a tight-fitting lid; cook for 17 minutes. Remove from heat; let covered skillet sit for 5 minutes. Remove lid and stir in parsley, fluffing rice and breaking up any clumps.

- Heat oven to 350 degrees. Prepare Rice a Roni mix as directed. Remove sausage from casing; crumble in 10 inch skillet. Brown sausage and onion; drain off fat, reserving 1 tablespoon of drippings in skillet. Set aside. Add zucchini and garlic; saute over medium heat 1 minute. Cover; continue cooking over low heat about 2 minutes or until crisp-tender. Combine prepared Rice a Roni, sausage mixture, 1 cup spaghetti sauce, and basil; spread into 11 x 7 inch baking dish. Sprinkle with 1/2 cup cheese. Top with zucchini. Pour over remaining sauce. Sprinkle with remaining cheese. Bake 25 to 30 minutes. You may substitute ground beef for sausage.
KIELBASA RICE A RONI
Versatile and delicious. You can also add frozen/fresh vegetables, different hams or sausages or herbs to change to flavours.

- heat oil in pan.
- Add chopped onion.
- Fry till transparent.
- Add kielbasa (chopped in small cubes) and fry till heated through.
- Add 1/2 pkg of noodle in soup mix (and half of seasoning found in pkg).
- Fry till it starts to brown.
- Add 5 cups water and bring to a boil.
- Add 2 cups rice and butter.
- Turn down the heat to simmer.
- Cover and cook till all liquid is absorbed.
- Take off the heat and let sit for 15 minutes or so.
