This recipe uses less fat and calories than traditional green beans with butter but tastes so much more gourmet! The beans are great hot, cold, warm. I love to just put them in a container and eat them as a snack. They are also a great unexpected addition in salads! Yummy. by MissMia

Katy Hees of Santa Fe, New Mexico, writes: "Eating local, fresh, organic food is important to me. It doesn't get much more local than the eggs I use, which come from our own chickens. I also have a garden, which inspired my roasted green beans."

OVEN ROASTED GREEN BEANS
This is another simple yet tasty side dish. Please feel free to use any dried herb that you like in place of the basil. Sometimes I even add a few shakes of crushed red pepper flakes to give a little "heat" to the beans. If you'd like to cut back a little on the olive oil, a few tablespoons of water in the bottom of the pan will keep the beans from drying out too much.
