Steps:

  • Put the minced shallot in a small strainer and rinse under cold water. (This will remove some of the raw onion flavor and help the shallot retain its crunch.) Pat dry, then transfer to a small bowl and add the celery, radish, and salt and pepper to taste.
  • Combine the vodka, tomato juice, the juice of one lemon half, the bitters, horseradish, Worcestershire sauce and hot sauce in a small pitcher and stir. Add salt and pepper to taste.
  • Add some crushed ice to 2 chilled glasses. Don't overload the Bloody Marys with ice so the flavors remain intense, not diluted. Add a hearty spoonful of the shallot mixture, then pour in the tomato juice mixture, filling the glasses almost to the top. Add another spoonful of the shallot mixture. Top each drink with a splash of vodka, like a "floater," and a squeeze of the remaining lemon half. Serve immediately.

1 small shallot, finely minced
1 stalk celery, tough strings peeled
1 radish, thinly sliced
Kosher salt and freshly cracked pepper
5 ounces cold vodka, plus more for topping (Alex likes Stolichnaya)
5 ounces cold tomato juice
1 lemon, halved
1 teaspoon Angostura or Peychaud's bitters
2 teaspoons creamy horseradish (Alex likes Inglehoffer)
3 dashes Worcestershire sauce
3 drops hot sauce

Steps:

  • Fill a small plate or shallow bowl with lemon juice. In a second plat or bowl, spread some Tajin. Dip the rim of an 8- to 10-ounce glass in the lemon juice, followed by a dip in the Tajin.
  • Add a large scoop of ice to the glass, then add the tomato juice, vodka, hot sauce, Worcestershire, horseradish, olive juice and a squeeze of lemon and stir.
  • Garnish the cocktail with the olives, 2 dashes of Tajin, a few turns from a peppermill and a lemon wedge for extra citrus, and serve!

Lemon juice, for rimming the glass, plus wedges for squeezing and garnish
Tajin seasoning, for rimming the glass, plus 2 shakes
5 ounces premium tomato juice (or make your own from garden-fresh tomatoes--about 1 pound for an 8-ounce cocktail)
2 ounces premium vodka (or any other spirit)
4 dashes hot sauce, such as Tabasco
3 or 4 dashes Worcestershire sauce
1/4 teaspoon prepared horseradish (not the creamy kind)
2 pimiento-stuffed olives, such as Mezzetta Spanish Queen Martini Olives, plus 1 to 2 tablespoons olive juice
Freshly ground black pepper

BLOODY MARY

Horseradish makes this the best Bloody Mary recipe we've tasted. Without the horseradish, you'll have a more traditional Bloody Mary, and without the alcohol, you'll have a Virgin Mary. Serve with a stalk of celery, dill pickle spear or olives. -Taste of Home Test Kitchen

BLOODY MARY MIX

We've made hundreds of thousands of bloody Marys over the decades at Prune, with 11 variations, and this classic base mix has been the stalwart, gleaming engine of them all. The lemon juice is what makes it so bright and zingy, and the Sacramento brand tomato juice is clean, with perfect body, never muddy or thick. Prepared horseradish keeps its bite and moisture just about forever, whereas fresh grated horseradish loses its potency almost immediately, leaving dead bits of pencil shavings in the glass instead - so resist the urge to "improve" the recipe. Worcestershire sauce adds greater depth to the umami already inherent in tomato, and the Tabasco brand hot-pepper sauce brings vibrancy with its high acidity but very manageable heat. This bloody Mary is as refreshing as a virgin affair as it is when spiked and garnished.

Steps:

  • Whisk together all the bloody Mary mix ingredients, transfer to a bottle and shake well just before using.
  • Fill tall glasses with ice; pour the bloody Mary mix on top.
  • If using the vodka, mix 1/4 cup vodka with 1/2 cup bloody Mary mix in a shaker over ice; shake for 10 hard strokes, strain and pour into each ice-filled glass.
  • Garnish with a leafy interior rib of celery, a wooden skewer of olives and a lemon wedge.

1 (46-ounce) can Sacramento brand tomato juice (5 3/4 cups)
3/4 cup plus 1 tablespoon Gold's Prepared Horseradish
1/2 cup fresh lemon juice (from 3 or 4 juicy lemons)
1/2 cup Lea & Perrins Worcestershire sauce
2 teaspoons freshly ground black pepper
2 teaspoons Diamond Crystal kosher salt
2 teaspoons Tabasco hot sauce
Ice
Tito's Handmade Vodka, for spiking (optional)
Celery ribs, pimento-stuffed olives and lemon wedges, for garnish

MAKE-AHEAD BLOODY MARY MIX

For this big-batch drink, mix everything but the vodka together ahead of time and allow the flavors to mingle. Let guests customize their Bloody Marys with black pepper and skewers with caperberries, okra, pickled onions, and lemon (Make the garnish a day in advance if you like).

6 cups tomato juice
1/4 cup fresh lemon juice (from 2 to 3 lemons)
3 tablespoons lightly packed grated peeled fresh horseradish
2 tablespoons Worcestershire sauce

BLOODY MARY

This humble Bloody Mary has its roots in a 2000 article by R. W. Apple Jr., who explored the origins of Worcestershire sauce, "perhaps best known as an indispensable ingredient" in the cocktail. Mr. Apple's version doesn't stray far from tradition, featuring the sauce prominently. Serve this version with a simple garnish of lime at your next brunch. (Betsey, Mr. Apple's wife, noted in the comments below that she always added horseradish and celery salt to those she served him at home. We think that's a grand idea.)
