A fail-safe recipe for a speedy fish supper - flaked salmon flavoured with parsley, dill and some secret ingredients

Steps:
- Heat the grill.
- Place 450g floury potatoes, cut into chunks, in a pan of water, bring to the boil, cover and cook for 12-15 mins until tender. Drain and leave to steam-dry, then mash.
- Meanwhile, season 350g salmon fillet and grill for 5-6 mins until just cooked. Cool for a few mins, then break into large flakes.
- Mix the potato, 2 tsp tomato ketchup, 1 tsp English mustard, the zest of ½ lemon, 1 heaped tbsp chopped parsley, 1 heaped tbsp chopped dill and some seasoning. Lightly mix in the salmon, taking care not to break it up too much.
- Shape into 4 large fish cakes.
- Put 3 tbsp plain flour, 1 beaten egg and 100g dried breadcrumbs in 3 shallow dishes. Dip the cakes into the flour, dust off any excess, then dip in the egg, and finally coat in breadcrumbs.
- Heat 4 tbsp sunflower oil in a large pan. Fry the cakes over a medium-low heat for 3-4 mins each side until deep golden and heated through.
- Serve with salad and lemon wedges.

Steps:
- Poaching the salmon: Put the salmon in a frying pan with the bay leaves and dill stalks. Pour over enough milk to cover the fish (you may not need all the milk), bring to the boil, then lower heat to a gentle simmer and leave to poach for 4 mins. Turn off the heat, then leave the fish to continue cooking in the poaching liquid for 5 mins. Lift the salmon out with a fish slice onto a plate. Flake into large pieces with a fork, then leave to cool.
- Making and drying out the mash: Meanwhile, cook the potatoes in boiling salted water for about 10 mins, or until tender. Drain well, then leave to cool in a colander for 2 mins. Tip back into the pan and return to the hob on a low setting. Mash the potatoes, watching that the mash doesn't catch at the bottom of the pan, for 2-3 mins - it should be dry and fluffy. Stir in lemon zest, mayonnaise, mustard, capers and some seasoning.
- Mixing and shaping fish cakes Pat away any liquid from the fish, then carefully lift the pieces into the pan with the mash. With your hands, gently mix together until roughly combined; it should take just a few movements or the fish will break up. Dust hands and work surface with flour. Shape a handful of the mix into a patty-shaped cake, about 2.5cm thick. Repeat to make 8 cakes.
- Breadcrumbing and frying Dip the cakes into the egg, then press into the breadcrumbs all over. Heat half the oil in a frying pan until very hot. Fry 4 fish cakes for 5 mins each side until golden. Remove; keep warm. Repeat with the rest, or freeze. Serve with lemon wedges and watercress.

SALMON FISH CAKES WITH DILL AND SPINACH SAUCE
Homemade fish cakes are so much better than the store bought ones. Give these a try and you'll never go back.

Steps:
- Boil the potatoes in salted water until tender.
- Drain, return to the pan and mash thoroughly without milk, butter or water.
- Tip the mash into a mixing bowl.
- Meanwhile, place the salmon in a suitable pan and cover with 300ml water.
- Crumble in the stock cube and add the bay leaf.
- Bring the water to the boil, reduce the heat and cook the fish for five minutes a side (10 minutes if the fish is totally immersed).
- Turn off the heat, cover the pan and leave for five minutes.
- Add half the fish (keep the stock to use later), the tomato ketchup and anchovy essence (if desired) to the potato.
- Season generously with pepper and lightly with salt.
- Mix thoroughly until smooth.
- Now flake the remaining fish and fold through the mixture.
- Form handfuls into eight regular-sized fish cakes or sausages, or 12 smaller ones, laying the fish cakes on a plate as you go.
- Chill to firm for at least 15 minutes and up to 24 hours (covered with clingfilm) in the fridge while you make the sauce.
- Melt the butter and stir in the flour until smooth.
- Discard the bay leaf and gradually add the hot fish stock, stirring constantly, as the sauce comes up to the boil to avoid lumps.
- Add the milk and cream.
- Reduce the heat and simmer gently for five minutes.
- Shred the spinach.
- Stir spinach and dill into the thick, creamy sauce.
- Cook for a few minutes until the spinach wilts.
- Taste and adjust the seasoning.
- Preheat the oven to 400F or 200 degrees C.
- Oil a baking sheet.
- Dust the fish cakes with flour, shaking off any excess.
- Heat the oil in a frying pan and, when very hot, fry the fish cakes for about five minutes a side until nicely crusty.
- Transfer to the baking sheet and cook in the oven for 10 minutes.
- Reheat the sauce and serve with the fish cakes, adding a wedge of lemon.

- Combine ingredients in a small bowl and mix well. Set aside.
- To make salmon cakes:.
- Preheat oven to 450°F Coat a baking sheet with cooking spray.
- Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and celery; cook, stirring, until softened, about 3 minutes. Stir in parsley, remove from the heat.
- Put salmon in a medium bowl. Flake apart with a fork, remove any bones and skin. Add egg and mustard(and honey if using), mix well. Add onion mixture, breadcrumbs and pepper, mix well. Shape the mixture into 8 patties, about 2 1/2 inches wide.
- Heat remaining 1 1/2 teaspoons oil in the skillet over medium heat. Add 4 patties and cook until the bottoms are golden, 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.

- Flake salmon so no large lumps remain.
- Add egg, mayo, salt, pepper, dill and breadcrumbs. Mix well.
- Form into four cakes. Coat with additional breadcrumbs.
- Heat a skillet over medium heat and melt 1 Tbsp of butter. Add olive oil.
- Fry cakes in skillet until golden on both sides -- about 5 minutes per side.
- Remove cakes and to the pan, add 2 tbsp butter and 2 tbsp flour. Cook, stirring, until the roux is bubbly.
- Slowly add the milk/salmon juice, stirring all the while.
- Simmer 3 minutes, adding dill during last minute of cooking.
- Serve over fish cakes.
DILL SAUCE
This sour cream dill sauce is great over any fish, especially grilled salmon. You may add more lemon or mustard to suit your taste.

Continuing my recipe quest thru *Modern German Food* by Roz Denny, this recipe intrigued me. Iceland is surrounded by the Atlantic Ocean, so seafood abounds & we often eat fish cakes (usually made w/white fish, salmon, tuna or crab). *Fischfrikadellen mit gruner Sauce* in German, this recipe uses white + smoked fish fillets & then compliments them w/an equally intriguing herbed sauce. I have not made this, but it will be on my cooking agenda after our return from the U.S. in mid-Nov. *Edited to Add* on 4/3/08 -- I have made this recipe now, modified the sauce slightly to add some flavor zip & added a note below the prep Re a substitution that works well. *Enjoy* !

- Coarsely grate potatoes & squeeze out all excess moisture. Coarsely grate onion. Add half the onion to the potatoes & reserve the other half for the sauce.
- Chop fish fillets roughly, place in a food proc w/some freshly ground black pepper & whizz to a smooth paste.
- Combine fish paste w/the potato/onion mixture & add salt as desired, remembering the smoked fish provides a salt component. Shape mixture into 8 rd cakes & set aside.
- Wash out the food proc & make the sauce by blending your chosen herbs till finely chopped (See note below Re Herb Mix).
- Add remaining sauce ingredients + reserved grated onion & pulse to a slightly chunky puree - not smooth as it should have some texture. Taste sauce, add salt & pepper as desired, transfer to a bowl & set aside.
- Dust fish cakes lightly w/flour. Heat oil to a depth of 1/2-inch & fry cakes (in 2 batches as needed) for about 3 min on ea side over med-heat. Drain on paper towels & reheat oil to cook 2nd batch. Serve fish cakes w/sauce & a fresh tomato salad.
- RE HERB MIX: (Quoted from recipe) "Choose from parsley, chives, chervil, dill, marjoram, sorrel, coriander, basil, tarragon, borage, lovage, rocket or baby spinach. Use the more pungent herbs sparingly.".

- Preheat oven to 325^F.
- Spray an 8+1/2x4+1/2x2+1/2 loaf pan with cooking spray.
- In a small saucepan over medium low heat, melt the butter.
- Add shallots and saute 2 minutes, until tender.
- Add the dry vermouth and simmer until liquid is reduced to 1 tablespoon, about 6 minutes.
- Place salmon and scallops in the bowl of a food processor and pulse until finely chopped.
- Add shallots mixture, breadcrumbs, egg, salt, pepper and hot pepper sauce.
- With the machine running, add the whipping cream gradually, and process until just pureed.
- Combine 1 cup salmon puree with the spinach in a medium bowl.
- Spread half of remaining puree in pan.
- Spread spinach/ salmon mixture over puree in pan.
- Spread remaining salmon puree over spinach/salmon puree.
- Cover with buttered wax paper.
- Place loaf in a roasting pan.
- Add enough hot water to come 1/2 inch up sides of loaf pan.
- Bake terrine until center registers 140^F, about 55 minutes.
- Place loaf pan on a rack and cool.
- Remove wax paper.
- Cover with plastic wrap and chill until cold-at least 4 hours or up to 1 day.
- Invert terrine onto a platter.
- Cut crosswise into 12 slices.
- Place each slice on an individual serving plate.
- Spoon Cucumber-Dill sauce alongside.
- Garnish with dill sprigs.
- Cucumber-Dill Sauce: In a medium bowl, combine cucumber and salt.
- Let stand 30 minutes.
- Drain in a colander and rinse well.
- Pat dry with paper towels.
- In a small bowl, combine the cucumber, sourcream, milk and dill.
- Season.
- Cover and refrigerate at least 2 hours.
