Steps:

  • Fold the crème fraîche with the horseradish and vodka, if using, with a little seasoning. Chill.
  • In a bowl, mix the vinegar, olive oil and honey. Toss half the dressing through the beetroot and chill until ready to serve.
  • Before serving, divide the slices of salmon between 8 plates, then top with a spoonful of the crème fraîche and bring up the sides of the salmon to make a 'flower'. Arrange the salad and beetroot round the salmon, scatter with the dill. Grind over some black pepper, drizzle with the remaining dressing and serve with toast, if you like.

Salmon With Horseradish

Steps:

  • Preheat oven to 350 deg.F. Lightly oil a 9-in. pie plate or other baking dish.
  • Combine the yogurt, horseradish and chives in a small bowl. Season with salt and pepper. Season the salmon lightly with salt and pepper. Place salmon in pan and pour sauce over it.
  • Bake salmon until just cooked through, about 18 to 20 minutes. Transfer to plate. Garnish with chives.
  • Note1: The original calls for low-fat yogurt, but I don't like the additives, and always use whole milk natural yogurt.
  • Note2: The original recipe suggests 1 tbl. of the yogurt mix spread on the fish, with the remainder passed as a sauce. I really prefer cooking all of the sauce and serving the pan sauces with the fish.
  • Note3: A fillet works as well as a steak, just watch the thickness.
  • Note4: Try fresh dill instead of chives - lovely. Also, really drain the horseradish well.

  • Dissolve the salt in the water and brine the salmon in the refrigerator for 30 minutes to 1 hour, depending on how thick it is. Move the salmon to a cutting board and pat dry with paper towels.
  • If you have a vacuum sealer, seal each portion of salmon in its own bag -- if you jam them all together they won't cook as well -- each with at least 1 tablespoon of butter; you can use more if you'd like. If you don't have a vacuum sealer, melt the butter in a pot large enough to submerge at least 1 piece of salmon. Turn the oven on to "warm" and put a baking sheet inside; this is for the cooked pieces of salmon to rest while you do the others. Of course, you could also melt a pound or so of butter and poach all of the salmon at once, but that gets expensive.
  • The easiest way to poach the salmon is to cook it sous vide for 20 to 45 minutes at 135°F -- the lower end of this spectrum will give you rare-on-the-inside salmon, the upper end will get you fully cooked but still luscious salmon. If you don't have a sous vide water oven., fill a large pot 3/4 full of water and heat it to the steaming point, about 150°F to 160°F. Don't let it simmer. Drop the vacuum-sealed salmon in the water, cover the pot and turn off the heat. Let them cook in the bags for 10 to 20 minutes. If you are doing the butter bath method, melt the butter over low heat. Place the salmon in the butter and let it cook gently for 10-20 minutes. Carefully lift it out with a spatula and move it to the preheated oven.

  • Season the salmon fillets on all sides with salt and pepper. Lay basil leaves on top of 4 of the salmon fillets, and then place another salmon fillet on top of each basil-covered one to make a sandwich.
  • Brush the top of 1 phyllo sheet with melted butter, fold the sheet in half, then brush the top with more butter. Place 1 salmon-basil fillet on 1 end of the phyllo dough and wrap neatly. Repeat with the remaining phyllo, butter, and salmon-basil fillets.
  • Make the sauce by stirring the sour cream, horseradish, lemon zest and juice in a bowl to blend. Season the horseradish cream to taste with salt and pepper and stir in the basil or chives.
  • Divide the oil between 2 nonstick sauté pans and heat the oil over medium heat (or alternatively heat the oil in 1 very large nonstick sauté pan that can accommodate all the salmon pieces comfortably, or cook them in batches). Add 2 phyllo-wrapped salmon fillets to each pan and cook for about 3 to 4 minutes on each side, or until the phyllo is golden brown and a metal skewer can be easily inserted into the salmon. When the skewer is left in the salmon for 5 seconds it will feel just warm when touched to the lip. Serve the salmon fillets with the horseradish cream.
