SHIITAKE DELIGHT

This is a very delightful meal. Very simple, and my two-year old loves it! Interesting taste and texture. Serve with white rice.

Steps:

  • Heat the olive oil in a skillet over medium heat, and cook the garlic just until golden. Mix in mushroom pieces, and cook 10 minutes, until tender.
  • Pour the broth into the skillet. Stir in butter until melted. Season with Italian seasoning and salt.

Sautéed Shiitake Mushrooms image

Steps:

  • Heat oil in a medium skillet over medium heat. Add mushrooms and cook, tossing occasionally, until tender and golden brown, 8-10 minutes.
  • Add 2 tablespoons water to skillet and cook, tossing mushrooms occasionally, until water is evaporated and mushrooms are tender, about 2 minutes longer. Transfer mushrooms to a medium bowl and toss with teriyaki sauce.
  • DO AHEAD: Mushrooms can be made 5 days ahead; cover and chill.

2 tablespoons olive oil
8 ounces shiitake mushrooms, stems removed
1/4 cup Canal House Teriyaki Sauce or 1 tablespoon (scant) prepared oyster sauce

  • Clean the mushroom caps and remove stems. In a saucepan, combine the sake, soy sauce, mirin, and sugar and bring to a boil. Reduce to a simmer and add the mushrooms. Simmer for 7 minutes. Remove mushrooms and use in a salad immediately, or cool and use later with grilled meats.

2/3 cup good-quality sake
4 tablespoons dark soy sauce
2 2 tablespoons mirin
2 2 tablespoons sugar
