OKRA AND TOMATOES

This is a recipe that my sister-in-law made for us during our visit with them in Kansas. I'm not sure where she found the recipe.

Steps:

  • 1. In a large skillet; Saute garlic in the olive oil for 1-2 minutes.
  • 2. Add onion and bell pepper to the skillet. Saute 3-4 minutes.
  • 3. Add okra to the skillet mixture. Saute 4-5 minutes
  • 4. Add the tomatoes, tomato sauce, water, sugar and cajun seasoning. Simmer until vegetables are crisp tender.
  • 5. Her original recipe called for 2 cups of tomato juice. I don't normally keep that on hand so I substituted tomato sauce, sugar and a little water. This is really good warmed up the next day.

2 Tbsp olive oil
2-3 clove minced garlic
1 c chopped onion
1 c bell pepper, cut in bite size pieces
2 c okra, cut (fresh or frozen)
14 1/2 oz diced tomatoes
8 oz tomato sauce
2 tsp sugar
1 c water
1 tsp louisiana cajun seasoning

Steps:

  • In a saute pan, heat the oil over medium heat. Add the onions and cook, stirring, until soft and translucent, about 3 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the wine and cook until reduced by half, 3 to 5 minutes. Add the okra, red pepper flakes, tomatoes, thyme and bay leaves. Season with salt and pepper. Cover, decrease the heat to low and simmer, stirring occasionally, until the okra is just tender, about 15 minutes. Taste and adjust for seasoning with salt and pepper. Serve immediately.

3 tablespoons olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1/2 cup white wine
1 1/2 pounds okra, stems trimmed, cut into 1/2-inch pieces
1/2 teaspoon red pepper flakes, or to taste

3 sprigs fresh thyme
2 bay leaves, preferably fresh
Coarse kosher salt and freshly ground black pepper

COUSCOUS WITH TOMATOES, OKRA AND CHICKPEAS

Okra is popular in the North African cuisines of Tunisia and Algeria, where it is also dried. Because you don't cut it up, the okra doesn't become slimy. It contributes great flavor to the stew. Very high in dietary fiber, okra is a great source of vitamins A, C, B complex and the phytonutrients glutathione, xanthin, lutein and beta carotene, all believed to have antioxidant properties. For the best texture and flavor, look for the smallest pods you can find

Steps:

  • Heat 1 tablespoon of the olive oil in a large, heavy soup pot or Dutch oven over medium heat and add the onion. Cook, stirring, until it is tender, about 5 minutes, and stir in the garlic, 1/2 teaspoon salt and the spices. Stir together for about 1 minute and add the tomatoes. Cook, stirring often, until the tomatoes have cooked down slightly, 5 to 10 minutes. Add the chickpeas, 2 quarts water and the bouquet garni. Bring to a gentle boil, reduce the heat, cover and simmer 1 1/2 hours.
  • Meanwhile, trim the stems off the okra and place in a large bowl. Salt generously, douse with the vinegar and let sit for 30 minutes to an hour. Drain the okra and rinse thoroughly. Set aside.
  • After 1 1/2 hours, season the chickpeas with salt to taste and add the harissa, tomato paste, red pepper and okra. Bring back to a simmer and simmer 30 to 45 minutes, or until okra and beans are tender. Remove a cup of broth to use for flavoring the couscous. Stir in the chopped fresh herbs and simmer another few minutes. Taste and adjust salt. The stew should be spicy and flavorful.
  • Reconstitute and steam the couscous (see recipe). Serve the couscous in wide bowls or mound onto plates and top with the stew. Pass more harissa at the table.

CUMIN-SPICED OKRA AND TOMATOES

Okra and tomatoes are a classic combo. This is a delicious, spicy variation that's really easy to make. I made this often in college and turned my okra-skeptical roommate into a fan. I like this served over brown rice, but it's also great thinned out into a stew.

Steps:

  • Heat oil in a dutch oven over medium heat.
  • Saute onion for a few minutes until it begins to soften.
  • Add garlic, jalapeno, and cumin and cook 1-2 minutes longer. Don't brown the garlic or it will get bitter.
  • Add okra, tomatoes, and tomato juice. Salt and pepper to taste.
  • You can add water to make a soupier dish, or leave it fairly dry. I add 1/4-1/2 cup.
  • Cover and cook 5-10 minutes. Okra should soften and the juices will become quite thick.

  • Pour 350ml boiling water over the couscous, cover and leave to stand for 10 mins, then season and stir with a fork to break up any clumps.
  • Stir the lemon juice into the okra, then serve on top of the couscous with feta and parsley scattered over, or yogurt spooned on top.

Steps:

  • Heat a large wok or frying pan over a medium heat. Add the oil, then the onions, cooking until soft. Stir in the okra. Add the tomatoes and chilli, then season. Mix well and keep stirring gently, taking care not to break up the okra. Okra releases a sticky substance when cooked, but keep cooking, stirring gently - this will disappear and the tomatoes will become pulpy, about 10 mins.
  • Lower heat, add ground coriander and cook for another 5-10 mins. Add 2 tbsp water, cover and let simmer for another 4-5 mins. Sprinkle with coriander and serve with basmati rice or chapati bread.

  • In a large skillet or Dutch oven, cook bacon until the bacon is starting to get crispy and the fat is rendered, about 5 minutes.
  • Stir in tomatoes (with their juices), sugar, thyme, bay leaf, vinegar and Worcestershire sauce. Use the juices from the tomatoes to deglaze the pan, scraping up the browned bits from the bottom. Reduce the heat to low and simmer, uncovered, for 10 minutes.
  • Add the okra, cover with a lid, and simmer, stirring occasionally, until the okra is tender (about 10-12 minutes for fresh okra or 7-8 minutes for frozen okra).
