STUFFED HASH BROWN POCKETS RECIPE BY TASTY

Steps:
- Add the potatoes to a large pot. Cover the potatoes with cold water and season with 1 tablespoon of salt. Bring to a boil over high heat and cook until the potatoes are fork tender, about 20 minutes.
- Make the sausage filling: Add the onion to a large skillet over medium heat and cook until translucent, about 3 minutes.
- Add the peppers and cook until slightly tender, about 6 minutes.
- Add the garlic and sausage. Cook until the sausage is browned, about 4 minutes.
- Season with the paprika, cayenne, pepper, thyme, and salt and cook for another 5 minutes until seasoning is evenly distributed. Remove the pan from the heat.
- Make the egg filling: Heat the olive oil in a large skillet over medium heat, then sauté the spinach until fully wilted, about 5 minutes.
- Add the eggs and scramble until cooked, about 3 minutes.
- Add the bacon, pepper, and salt and mix to incorporate. Remove the pan from the heat.
- Transfer the potatoes to a colander and run under cold water to cool. Pat dry.
- Using the large holes on a cheese grater, shred the potatoes into a large bowl.
- Add the flour, Parmesan, onion powder, garlic powder, pepper, and salt. Mix together thoroughly.
- Transfer half of the hash brown mixture to a greased 13" x 18" (33 cm x 45 cm) baking sheet and spread evenly with a spatula.
- On the left side of the tray, spoon the egg filling into 4 evenly spaced piles. On the right side of the tray, spoon the sausage filling into 4 evenly spaced piles. Top each pile of egg filling with a tablespoon of shredded cheddar cheese.
- Top the piles of filling with the remaining hash brown mixture and use a spatula to carefully press down the hash browns, sealing the filling inside. Use the tip of the spatula to delineate between each pocket of filling.
- Freeze for at least 2 hours.
- In a large pot, heat oil until it reaches 380˚F (195˚C).
- Remove the hash browns from the freezer and use a sharp knife to cut and separate each pocket.
- Fry the hash brown pockets in batches for 5-7 minutes, or until browned on both sides. Drain the pockets on a wire rack set over a baking sheet lined with paper towels.

- In a large bowl, toss potatoes with onion, salt and pepper. In a small cast-iron or other heavy skillet, heat 2 teaspoons oil over medium heat. Add 1 cup potato mixture, pressing down to flatten with spatula. Cook, without stirring, until bottom is golden brown, 4-5 minutes. Drizzle with 1 teaspoon oil; flip. Cook until bottom is golden brown, 4-5 minutes, sprinkling with 2 tablespoons cheese and 2 tablespoons bacon during the last minute of cooking. , Fold hash browns in half; slide onto plate and keep warm. Ready, Set, Cook! Special Edition Contest Entry: This delicious recipe came to me one morning when I was make breakfast for my wife and children. It's all my favorite ingredients folded in a crispy hash brown, kind of like an omelet.

- Pre-heat oven to 350.
- Heat 15 inch cast iron skillet with 1/3 cup of olive oil.
- Once skillet is hot put 3 cups of Simply Potatoes Shredded Hash Browns in skillet. Once hash brown browns on one side turn over and brown other side.
- In another skillet cook bacon until crisp while hash brown is browning. Once bacon is cooked, drain on a napkin.
- Once hash browns are browned on both sides season with salt and pepper and turn heat down to low.
- In a small bowl combine onions, red peppers, spinach and cilantro. Once combined, add to one side of hash browns.
- Crack eggs directly on top of onions, red peppers, spinach and cilantro mixture. Add cheese on top of eggs, then fold other half of hash brown on the other side over onions, red peppers, spinach, cilantro, cheese and eggs.
- Place skillet in oven for 15 minutes. Once done season to taste with black pepper and salt. Place a serving on a plate or bowl and top with sliced avocado and a teaspoon of sour cream. .
WAFFLE IRON HASH BROWNS
I'm beginning to think my waffle iron can do anything. It can make waffles, of course. It can make omelets (try it! Just whip up omelet ingredients and pour them in). It can make panini (whoa?game changer). And it can make quesadillas to beat the band. (Oh, it can also sing "Jingle Bells" like no one's business. That's another story for another time.) But did you know your waffle iron can turn frozen hash browns into the crispiest, butteriest taters you ever did see/hear/taste? It's true. And considering how long both frozen hash browns and waffle irons have been around, I'm amazed it took humankind this long to figure it out. (I'm so glad it did!)

- Thaw the hash browns at room temperature for about 3 hours, turning the package over occasionally. (Or you may place the frozen hash browns in the fridge overnight.) When they are thawed, preheat the waffle iron to medium-low heat.
- Place half the hash browns in the middle of a stack of three or four paper towels. Bunch up the potatoes and squeeze them to force out as much liquid as possible. Place the hash browns in a large bowl, then repeat with the rest of the hash browns.
- Drizzle in the butter, then add the pepper and toss everything together.
- Coat the surface of the waffle iron with cooking spray, then add 1/2 cup of the potato mixture to each well. (You should hear them start to sizzle!)
- Sprinkle the chopped ham evenly over the potatoes then add the cheese. Sprinkle about 1/4 cup of the potatoes over the top of each waffle. Then close the lid and let 'em cook! How long the waffles take to cook depends on the heat of your waffle maker and the moisture of the potatoes. Lift the lid and check on the waffles from time to time to make sure they aren't burning. The edges and the cheese will start to crisp up and get golden, but you'll want to keep it going until everything is deep golden.
- Use a dull knife or spatula to remove the waffles. Serve them with ketchup and dig right in! These are absolutely addictive. Crispy and wonderful!
- Change Things Up!
- For a simpler hash brown, omit the cheese and ham and just put 3/4 cup
- potatoes in each well.
- Add diced onion and green bell pepper along with the ham and cheese.

- Preheat oven to 350 degrees. Over medium high heat, ladle some of the butter into a large oven safe skillet spread half of the hash browns into the pan. Put sour cream, chives, cheese, onions, salt and pepper on hash browns, top with remaining hash browns; cook 3 to 4 minutes on medium high heat until bottom is golden brown. Ladle more melted butter onto hash browns and flip. Cook until desired crispness is reached. Finish in oven for 10 minutes.
UGLY MEATLOAF
I came up with this tonight in order to use up some ground turkey and hash brown patties. I crossed my fingers as I went along, and surprise! - It is delicious! :) The kids also loved it (6 and 3 y.o.). It is comfort food at its best. Yum! I served this with a simple side salad.

- Preheat the oven to 350 degrees F.
- In a large mixing bowl, add ground turkey, ground pork, onions, 1/3 c cream of mushroom soup, egg, breadcrumbs, salt, pepper and garlic powder. Mix together by hand until all ingredients are well blended.
- Coat an 8 x 13 or 10 x 13 casserole dish with non-stick spray.
- Press half of the meat mixture into a long rectangle in the dish (about 10").
- Position the three hash brown patties from the center out (these were rectangular and about the size of an index card - made by Mr. Dee's). There should be an inch of meatloaf all around the edges, and you can add meatloaf where needed.
- Spread the rest of the cream of mushroom soup evenly over the three hash brown patties. Try not to get the soup on the meatloaf.
- Carefully press the rest of the meat mixture flat between your hands and place piece by piece over the hash browns until completely covered.
- Bring the edges of the meatloaf together, pinch and smooth out bumps. No soup should peek through.
- Place casserole dish uncovered in oven. Bake for 1 hour.
- Let the meatloaf rest for 5 minutes before serving.

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain. Crumble bacon and set aside., Add the potatoes, onion and green pepper to drippings. Cook and stir over medium heat for 7-10 minutes or until potatoes are lightly browned and vegetables are tender., In a large bowl, whisk the eggs, milk, salt and pepper. Pour egg mixture into a large non-stick skillet (mixture should set immediately at edges). , As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath.
