Very good dessert! Water can be substituted for the pear juice if desired.

Steps:

  • Mash pears with a fork in a bowl until desired consistency is reached.
  • Measure 1 1/2 cups juice from pears and pour into a saucepan; cook over medium-low heat until warmed, 5 to 10 minutes. Remove saucepan from heat and stir gelatin mix into pear juice until dissolved. Stir cream cheese and milk into gelatin mixture until smooth. Fold whipped topping into mixture; add pears and mix well. Spoon mixture into a 9x9-inch baking dish. Refrigerate until set, at least 1 hour.

  • Arrange lettuce on four salad plates; place a pear half cut side down on each plate. For eyes, insert two currants at narrow end of pear; add one currant for nose. For ears, insert almonds upright behind eyes. , With a sharp knife, cut a small hole at one end of each carrot; insert a parsley sprig for carrot top. Place under bunny's nose. For tail, spray a small mound of whipped cream at the wide end of each pear.

Steps:

  • Preheat oven to 375°F.
  • Slice pears in half lengthwise and scoop out a little of the flesh to make bowls.
  • Brush pears with oil. Sprinkle with salt, pepper and thyme.
  • Roast pears for 15 minutes and then take out of the oven.
  • Combine cheese, bacon and nuts. Fill pears with mixture.
  • Put the pears back in the oven and roast 15 minutes more.

Steps:

  • Preheat the oven to 350 degrees F.
  • In a bowl, toss the bread cubes, 3 tablespoons of the olive oil and some salt and pepper. Place on a half sheet tray and toast for 20 minutes.
  • Assemble the salad in a large bowl with the pecans, lettuce, pears and croutons. Pour the remaining 1/4 cup olive oil, the honey, lemon juice and some salt and pepper in a Mason jar and shake.
  • Pour the dressing over the salad and serve.

2 cups 1-inch cubes day-old multigrain bread
