BANANA APPLE MUFFINS

- In a small bowl, combine the first seven ingredients. In another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in apple and banana., Fill greased muffin cups about three-fourths full. Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Steps:
- Preheat oven to 375º degrees.
- In a large bowl add sugar, baking soda, salt, and flour. Stir well to combine dry ingredients.
- Add oil, milk, mashed bananas and vanilla, mix just until flour is moistened. Fold in raisins.
- Using a non-stick muffin pan or muffin papers, fill muffin cups approximately 2/3 full with batter.
- Bake for approximately 15-20 minutes or until golden brown. Remove from pan and let cool.

Fold in the apple and raisins. , Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For topping, in a bowl, combine the flour, oats, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over batter. Bake at 375° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

- Preheat oven to 350 degrees.
- Prepare 12 standard sized muffin cups with paper liners.
- Combine flax seed and 6 tablespoons water in small bowl and let sit about ten minutes.
- In a large bowl, stir together banana, apple sauce, concentrate, and 1 tablespoons plus 1 teaspoons water.
- Add flax water combination (this acts as the egg in the recipe).
- Stir in the baking soda quickly, then mix 28 to 30 beats. Immediately spoon batter into prepared muffin cups.
- Bake about 18 minutes or until toothpick inserted into muffin comes out clean.

- Preheat your oven to 180C/350F (160C/320F fan forced) and line a 12 hole muffin tin with squares of baking paper or muffin cases.
- Peel and grate the apples and chop the butter into cubes. Transfer the apple and butter into a small saucepan and cook for 5 minutes over medium heat, stirring occasionally until the butter has melted and the apple has softened.
- Meanwhile, mash the bananas in a large mixing bowl, using the back of a fork and then add the flour, baking powder, cinnamon, and eggs. When the apple and butter mixture is ready, transfer it to the mixing bowl, and stir all the ingredients together until well combined.
