This cornbread loaf is the perfect accompaniment to your favorite stew, ham and beans, soup, or fried fish!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9-inch loaf pan.
  • Mix cornmeal, buttermilk, flour, sugar, vegetable oil, salt, and baking soda in a bowl until thoroughly combined. Pour batter into prepared loaf pan.
  • Bake in the preheated oven until top is golden brown and a toothpick inserted into the center of the loaf comes out clean or with moist crumbs, about 1 hour.

WE LIKE corn bread with our chili, and this makes just enough for two people. I received the recipe from a quilting friend at church and have shared it with many others. Steps:

  • Preheat oven to 425°. In a bowl, combine the cornmeal, flour, sugar, baking powder and salt. In another bowl, blend egg, milk and shortening; stir into dry ingredients. Pour into a greased 8x4-in. loaf pan. Bake at 425° for 15-18 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from the pan and serve warm.

Steps:

  • Preheat oven to 350-degrees F.
  • Spray 9 x 5-inch loaf pan with cooking spray and dust with corn meal.
  • Mix first six ingredients (flour- salt) in large bowl.
  • Mix eggs, melted margarine/oil, milk in small bowl.
  • Add egg mixture and corn to dry ingredients.
  • Stir until combined.
  • Pour batter into pan.
  • Bake for 1 hour.

Steps:

  • In a mixer with the paddle attachment, cream the butter. Add the powdered sugar and mix in. Add the vanilla extract and mix in. Add the dry ingredients and mix until blended.
  • Roll into 1 1/2-inch logs and roll in cornmeal to coat. Wrap in plastic wrap and chill at least one hour or overnight.
  • Preheat oven to 300 degrees F.
  • Slice shortbread dough thinly and bake on a silpat or parchment paper for 12 to 15 minutes. The shortbread will still be blonde, and they will crisp once cool.

Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Steps:

  • Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan. Dust with sugar and flour, and tap out excess; set aside.
  • In a mixing bowl, cream butter until smooth. Add 1 cup sugar; beat until light and fluffy.
  • In a bowl, whisk together flour, cornmeal, lemon zest, baking powder, baking soda, and salt. In another bowl, whisk together eggs, buttermilk, and lemon juice.
  • With mixer on low speed, add flour mixture to butter mixture in two batches, alternating with the buttermilk mixture. Beat until just combined, scraping bowl as needed. Pour batter into prepared pan.
  • Bake until center is springy to the touch, about 55 minutes; drape with foil if cake browns too quickly.
  • Let cool 10 minutes in pan; invert cake onto a wire rack. Reinvert and let cool completely.
