TEXAS HASH
This beef, veggies and rice casserole is easy to make and a family favorite.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart (8 inch round) casserole dish.
- In a medium saucepan, bring 1 cup of water to a boil. Stir in instant rice, cover and remove from heat. Let sit for 5 minutes.
- In a medium skillet over high heat, brown ground beef with onions and green pepper. Stir in diced tomatoes, tomato sauce and chili powder. Simmer for 20 minutes.
- Stir cooked rice into the beef mixture. Mix in the corn, salt and pepper.
- Pour the mixture into prepared casserole dish. Cut the American cheese slices in half and place over the top.
- Bake in preheated oven for 15 to 20 minutes or until cheese is melted and bubbly.

TEXAS VENISON HASH
Got this recipe from my sister-in-law and can't wait to try it. I'm not sure where it orginally came from. Posting it now so I don't lose it. :D

Steps:
- Preheat oven to 350.
- Brown meat in EVOO.
- Add onions until soft.
- Stir in peppers, chili powder, salt and pepper to taste.
- Cook about 5 minute.
- In an oven dish, spread mixture and then layer potato over top.
- Cover with foil.
- Bake 45 minute.
- Remove foil and top with grated cheese.
- Bake 15 min more.

GROUND VENISON HASH
Yummy way to use up some of that venison

Steps:
- 1. Add crisco to large skillet. Add the onion, garlic salt and ground venison and cook until no longer pink.
- 2. Add the meat mixture to a slow cooker. Add the potatoes, cream of mushroom soup and corn to the slow cooker. Stir well.
- 3. Cover and cook on low for 6 hours. Add the cheese to the top and replace the lid. Left cook another 15 minutes until cheese is melted.
VENISON HASH
This is a good way to use up leftover venison. I usually don't have leftovers so I have to make fresh when making this. I ground my venison with a hand grinder much like my grandmother did. I hope you enjoy an old family favorite of ours.

CAMPFIRE GIRLS' TEXAS HASH
My mom was a Campfire Girl from Bluebirds until adulthood, when she was a summer camp counselor for several years. On some of those Bluebird overnights, they used to make this simple version of "Texas Hash". Transposed to the kitchen, it became a family favorite with her kids, and now I make it for my family. It's easy, cheap, fast, and satisfying. I add garlic and use no-salt-added tomatoes because I'm on a reduced-sodium diet due to pregnancy, and it turns out okay for us, but you may do as you wish, of course. This recipe would, of course, adapt easily to be a camp-out recipe.

Steps:
- In a deep-sided saute pan, dutch oven, or other deep pan with tight-fitting lid, brown beef over medium-high heat.
- (If not using lean ground beef, you will need to drain off all but a few Tbsp. of the fat at this point.) Add onion and garlic.
- Saute until onion begins to get transparent.
- Add rice.
- Stir in and saute a little more, just until rice starts to get opaque.
- Reduce heat to low.
- Add tomatoes, with their liquid.
- Stir well.
- Stir in chili powder.
- Add half the tomato can or so of water, and stir.
- Cover and cook for 15 minutes.
- Remove lid and stir again.
- Add 1/3 to 1/2 can more water, as necessary.
- Make sure you stir thoroughly so that none burns to the sides.
- Cook another 10 to 15 minutes, or until rice is done and all water is absorbed.

- Brown beef and onions in a large skillet over medium-high heat.
- When onions are translucent, add garlic and green pepper; cook until green pepper is softened.

CROCK POT TEXAS HASH
A very delicious, yet simple comfort food that everyone enjoys. Many, many ago, we were invited for dinner. As the hostess served this from the crock pot, I kicked my "meat and potatoes" DH under the table, knowing he was wondering "What is that???" He licked his plate clean, commented how good it was, and went back for seconds...and thirds. The 4 of us ate the entire 6 servings! On cold winter evenings, DH still requests this often. POTLUCK SUGGESTION: When "hash" is done and still very hot, spread in 9x13-inch casserole dish, top with spring onions and cheese; cover with foil or lid. Cheese will be melted by the time you arrive. You'll return with an empty dish!

Steps:
- Brown ground beef, breaking meat into small pieces, cooking until pink disappears from meat.
- Pour into colander and drain.
- Place cooked meat and all other ingredients into crock pot and stir thoroughly.
- Cook on High for 4 hours or Low for 6-8 hours.
- ***If you can still see individual grains of rice, keep cooking it until they disappear.
- Sprinkle cheese and spring onions over each serving, if desired.
