GROUND CHICKEN/TURKEY KOFTA KEBABS
This is a light recipe that is awesome on the taste buds. It is very easy and quick to make and goes nicely along with couscous. You can play around with the vegetable ingredients till you get the right mixture, so those are estimates. I usually get a stir fry mix with peppers and onion and use 1 cup and mince it in a cuisine art chopper. I usually form them on metal skewers and remove them when cooking since my grill is too small.

Steps:
- Mince garlic.
- Shred onion and pepper.
- Mix all ingredients together with a spoon till evenly mixed. You can put in the refrigerator from 30 to 24 hours.
- Use water on hands and form on skewers.
- Cook them on preheated lightly oiled grill, pan, broil, turning every 2 minutes until completely cooked. 6-10 minutes.

Steps:
- Mix all the ingredients in a bowl, best to use hands to get everything through.
- Shape the mix into kebab shapes around skewers.
- Cover in clingfilm and pop in the fridge for 30 minutes.
- Place on a medium grill for 15 minutes (or till cooked depending on thickness of kebabs).

- In a large covered saucepan, heat a splash of water over medium heat. Add spinach; cover and cook, tossing with tongs a few times, until wilted, 4-5 minutes.
- Spoon spinach into a mesh sieve. Use your hands to squeeze water out of spinach, a little at a time, until very dry; squeeze any remaining water out by rolling spinach in a paper towel. Set aside.
- Place spinach, mint and parsley in a food processor; pulse several times to chop finely. Transfer to a large bowl; add onion, garlic, turkey, spices and salt. Season with black pepper; combine ingredients well using a large fork.
- Divide turkey mixture into four equal portions; with wet hands, form four egg-shaped kofta from each portion . Thread 4 kofta lengthwise through a 10-inch metal skewer, alternating with tomatoes (there will be 4 kofta and 3 tomatoes per skewer); repeat with remaining ingredients. Cover with plastic wrap; let sit for at least 30 minutes.
