VEGGIE STUFFED TWICE BAKED POTATO BOATS

A yummy recipe from Cat Cora, iron chef on the Food network. I changed the recipe around a little to please me. You can use vegetables that work for you, such as leftovers!

Veggie Stuffed Twice Baked Potato Boats image

Steps:

  • Preheat oven to 350°.
  • Bake the potatoes for 1 hour. Remove and let cool until able to handle. Cut each in half and scoop out the insides to create the "boats.".
  • In a large bowl, mix the insides of the potatoes with the butter or olive oil, grated cheeses and herbs, and stir until combined. Stir in all veggies, season to taste with salt and pepper and scoop mixture back into each potato half.
  • Place back into the oven and cook for about 10 minutes, or until cheese is fully melted.
  • Top with crumbled veggie bacon(along with salsa if desired), or enjoy straight from oven, serving 2 potato boats per person.

4 well-cleaned potatoes
2 tablespoons butter (or olive oil)
1/4 cup grated low-fat sharp cheddar cheese
1/4 cup grated parmesan cheese
1 teaspoon Italian herb seasoning
1/2 cup frozen broccoli florets
1/2 cup shelled frozen peas, thawed
1/2 cup sliced frozen carrots, thawed
1/2 cup chopped tomato
2 tablespoons chopped black olives (or geen or kalamata)
kosher salt
fresh ground black pepper
2 slices Morningstar Farms veggie bacon strips, cooked until crispy and crumbled

Garden Stuffed Baked Potatoes image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Pierce the skin of the potatoes with a fork.
  • Microwave pierced potatoes on HIGH for 12 minutes. Place partially baked potatoes in the preheated oven and bake for 15 minutes. Slice off potato tops, scoop out the bulk of the interior of the potato being careful to leave the potato skins intact. In a medium bowl, mash the removed potato interior.
  • Heat a small skillet over medium heat, stir in butter. Saute onions in the skillet until tender, about 5 minutes.
  • Combine onions, broccoli, and ranch dressing with the mashed potato. Brush the outside of the potato skins with oil. Spoon potato mixture into the skins. Arrange stuffed potatoes on a cookie sheet.
  • Bake potatoes for 15 minutes in the preheated 425 degrees F (220 degrees C) oven, or until heated through. Season with salt, pepper, and parsley.

Steps:

  • Preheat oven to 400 degrees F.
  • Scrub potatoes.
  • rub with a little vegetable oil to make skins softer.
  • Pierce skin with fork to allow steam to escape.
  • Bake at 400 degrees until tender for about 50 to 60 minutes.
  • Cool potatoes for 10 minutes.
  • Cut potato in half and carefully scoop out pulp, leaving shells intact.
  • In a large bowl, mash potatoes using a potato masher to remove lumps.
  • Heat margarine and milk until margarine melts and beat into potatoes.
  • Beat in sour cream, salt and pepper.
  • Spoon into potato shells and brush with melted butter.
  • Top each potato with cheddar cheese and chives.
  • Place in oven until cheese melts on top.

Steps:

  • Equipment you will need: medium mixing bowl, small mixing bowl, dessertspoon, fork, baking tray, grater, oven gloves.
  • Get an adult to heat the oven to 200C/180C fan/gas 6 and bake the potatoes for about 1 hr until cooked and the skins are crispy. Leave to cool completely. This can be done up to 2 days ahead.
  • To stuff the jacket potatoes, heat the oven to 200C/180C fan/gas 6. Ask an adult to cut the potatoes in half. Using a spoon, carefully scoop out the middle of the potato, leaving the skin unbroken (like a boat). Place the scooped potato into a mixing bowl.
  • Using the fork, mash the potato until there are no lumps. Add the cheese, sweetcorn and peppers and mix well. Gently pick the leaves from the herbs. You can rip the larger leaves into smaller pieces. Stir the herbs into the cheesy potato mixture.
  • Using the spoon, carefully scoop the mixture back into the potato boats. Make sure that you use all the mixture up. Sprinkle with a little extra grated cheese and place on a baking tray. Using oven gloves, place the tray in the oven and bake for 10-15 mins until golden.

  • Preheat the oven to 350 degrees F. Scrub each potato clean. Pat potatoes dry with a clean kitchen towel. Use a fork to poke holes all over each potato. Drizzle 1 tbsp olive oil all over the tops of the potatoes. Use your hands to rub the oil to cover the entire potato. Sprinkle each potato with salt and pepper.
  • After 45 minutes of baking, add the broccoli and cauliflower to a small baking sheet. Coat the veggies with remaining tbsp olive oil, a pinch of salt, and a pinch of black pepper. Roast the veggies along with the potatoes for 15-20 more minutes. Once the potatoes are fork tender, carefully remove them and the veggies from the oven.
  • Cut the top 1/4 of each potato off. Roughly chop the removed "cap" of the potatoes and then add to a large mixing bowl. Using tongs or oven mitts to grip the potatoes, scoop the inside out of each potato, leaving the skin behind. Add the scooped out potato to the large mixing bowl.

  • Preheat oven to 400 degrees. Wash potatoes and pat dry. Pierce potatoes with a fork. If desired whisk an egg white until frothy or use olive oil and brush the potatoes. Then roll the potato in a combination of kosher salt, ground black pepper, rosemary and thyme. I usually sprinkle the spices on a cutting board and roll the potato around on it. Bake potatoes for about 60 minutes, until tender. Remove from oven and let sit until cool enough to handle.
  • While potatoes cool saute onions until translucent. Adjust oven temperature to 350 degrees. Use a small knife and cut around the top of the potato. You are trying to make a bowl of sorts. Remove the top of the potato. Hold the potato in one hand. I find an oven mitt works great to hold the potato if it is too hot to handle. Use a small spoon to scrape out the inside of each potato into a mixing bowl, leaving a thin edge for support (less than 1/2 inch). Use a handheld mixer if possible. Add in butter, milk or cream, garlic, parmesan, bacon or sausage, salt and pepper. Add 1/2 cup to 1 cup of shredded cheddar to taste.
  • Arrange hollowed potatoes in a large baking dish. Place mashed potatoes into a ziploc bag and push to the bottom. Cut one corner off. Squeeze out mashed potato into the potato. If no bag available simply spoon potato mixture back inside the potato. Sprinkle with cheese. Approximately 1/4 cup per potato. Heat in oven for about 15 minutes. Then turn oven up to broil until cheese is nicely browned. About 5 minutes. Serve immediately.
