OLD WEST BAKED BEANS
This slow-baked molasses-and-mustard-flavored western favorite is a perfect party food because it can be made days ahead and just gets better with time. Enjoy it while watching Blazing Saddles,, which, according to creator Mel Brooks, is best seen on video. Claims Brooks, "I can't watch Blazing Saddles on television ... A lot of prudes got together and silly people got together and they cut out everything they thought would be offensive to a 4-year-old."

Steps:
- Soak the beans overnight in water in a large bowl.
- Preheat the oven to 375 degrees F.
- Saute the onions and pork over medium heat in a cast iron Dutch oven until the onions are tender, abut 10 minutes. Add the drained beans, pork, chicken stock, cayenne, molasses, ketchup, brown sugar, and salt and pepper to taste and bring to a boil.
- Cover the casserole and transfer to the oven. Bake to 3 1/2 to 4 hours, until the beans are tender.
- Serve topped with a sprinkle of brown sugar.

My husband does not like baked beans but can't get enough of these. They are loaded with a variety of meats and get a little bit of sweetness from molasses and brown sugar. If you don't have a slow cooker, you can bake them in the oven until heated through.

- Crumble the ground beef in a large skillet over medium-high heat. Cook and stir until no longer pink, 5 to 10 minutes. Drain off grease and transfer the beef to a 4 quart or larger slow cooker. Stir in the baked beans, bacon, ham, onion, chili powder, ketchup, brown sugar and molasses. If it seems thick, stir in the water. Cover and cook on High for 3 hours or cook for 6 to 8 hours on Low.

- Cook the bacon in a dutch oven until done.
- Remove the bacon from the dutch oven and reserve.
- Saute onion in the bacon drippings until tender.
- Add all the remaining ingredients, including the reserved bacon, to the dutch oven.
- Simmer for 45 minutes.
- Remove the bay leaf before serving.

Great doctored baked bean recipe. Found this in an old hand-made school recipe booklet. Always requested at cookouts. Great the first day, better the second. Use only the molasses based beans not the ketchup style.

HOMESTEAD COWBOY BEANS
I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crispy, 10 to 12 minutes. Drain bacon slices on paper towels and crumble when cool enough to handle.
