- In large saute pan, warm oil.
- Saute the onions, green pepper, and garlic until soft.
- Add the rice and saute another 2 minutes, until sweetly fragrant.
- Stir in almonds and transfer to casserole dish.

- Bake in a preheated 350F oven for 1- 1 1/2 hours or until all liquid is absorbed.

WILD RICE WITH SHITAKES AND TOASTED ALMONDS
This recipe comes from "The Eating Well with Diabetes Cookbook". It makes great use of the dried shitakes I always have on hand. It is low in fat and high in fiber.

- Over high heat, in a medium saucepan, bring the broth to a boil, add rice.
- Reduce heat to simmer, cover and simmer until the rice is just tender, 45 to 55 minutes.
- Drain any remaining liquid and transfer the rice to a serving bowl.
- While the rice is cooking, toast almonds in a small dry skillet over medium-low heat, stirring constantly until golden brown and fragrant; approximately 2 to 3 minutes.
- Transfer to a plate and allow to cool.
- If using dried shitake mushrooms, rehydrate in water as instructed on package, drain and about 5 minutes before rice is done, melt the butter in a medium nonstick skillet and add the scallions and mushrooms.
- Cook over medium heat, stirring often, until softened and scallions are a bright green; 2 to 3 minutes.
- Add the scallion mixture, almonds and pepper to the rice.
- Stir to mix thoroughly and adjust seasonings as necessary for personal taste.

- In a saucepan, bring pineapple juice, broth, orange juice and butter to a boil. Stir in rice and seasoning packet. Bring to a boil.
- Cover tightly and reduce heat to medium-low to low. Simmer until all liquid is absorbed, about 25 minutes.
- Fluff rice with a fork, stir in almonds and serve.
WILD RICE, DRIED CHERRY, AND ALMOND STUFFING

- In a small bowl, mix the dried cherries and port and let stand while preparing the stuffing.
- Bring a large pot of lightly salted water to a boil over high heat. Add the wild rice and reduce the heat to medium. Cook until the wild rice is tender and most of the grains have burst, 45 to 60 minutes. Drain well and rinse under cold running water. Place the rice in a large bowl.
- In a large skillet, melt the butter over medium heat. Add the chopped celery and cook until crisp-tender, about 5 minutes. Add the shallots and celery leaves and cook until softened, about 2 minutes. Add the cherries and their soaking liquid. Boil until the port has almost completely evaporated, about 3 minutes. Stir the mixture into the wild rice, along with the almonds, sage, salt and pepper. (The stuffing can be prepared up to 1 day ahead, stored in self-sealing plastic bags and refrigerated. To reheat the stuffing, melt 3 tablespoons unsalted butter over medium heat in a large skillet or Dutch oven. Add the stuffing and cook, stirring often, until warmed.
- Use to stuff the turkey. Place any remaining dressing in a buttered baking dish, cool, cover, and refrigerate. To reheat, drizzle with about 1/4 cup broth and bake in a preheated 350 degree oven for about 20 minutes.

- Heat oven to 180C/160C fan/gas 4. Heat the butter or oil in a flameproof casserole dish and gently cook the onion for 15 mins until just starting to turn golden. Add the rice and cranberries, and stir a few times until coated. Season well and pour over the stock.
- Float the bay leaves and thyme on top of the stock, and put a circle of baking parchment on top of that. Cover with a lid and put in the oven for 45 mins until the rice is tender. Stir through the parsley, almonds and orange zest. Serve hot, or leave to go cold and serve as a salad, dressed with olive oil and lemon juice.
