Yellow Summer Squash Soup image

Steps:

  • Put the chopped onion, squash, and butter into a big pot and pour in the chicken broth until it is about two-thirds of the way up the vegetables. (Do not cover vegetables with the broth).
  • Bring to boil and continue to boil gently for about 20 minutes.
  • Take off heat and cool.
  • When mixture is cool enough to handle, put it in a blender or food processor and blend.
  • Return mixture to the pot and season with salt and pepper.
  • Slowly stir in the cream or half-and-half. (you may use less than 3/4 cup).
  • Add herbs, if desired.
  • Serve hot or cold.

2 lbs summer squash, stem cut off and the rest coarsely chopped
2 tablespoons butter
1 (10 1/2 ounce) can chicken broth
salt and pepper
3/4 cup cream or 3/4 cup half-and-half
chervil or parsley, if desired

YELLOW BROTH

This is one of many versions of this famous Northern Irish soup, which is both thickened with, and given its flavor by, oatmeal. It's the perfect soup to serve on a really cold winter's day, garnished with chopped fresh parsley. From my favorite soup cookbook "400 Soups".

Steps:

  • Melt the butter in a large stock pot.
  • Add the onion, celery and carrot and stir to coat with the melted butter.
  • Cook for about 2 minutes until the onion is beginning to soften.
  • Stir in the flour and cook gently for 1 minute more, stirring constantly.
  • Pour in the chicken stock, bring to a boil, and cover.
  • Reduce the heat and simmer for 30 minutes until the vegetables are tender.
  • Stir in the oatmeal and chopped spinach and cook for 15 minutes, stirring occasionally.
  • Stir in the cream and season well with salt and pepper.
  • Serve hot, garnished with chopped fresh parsley.
