Steps:
- Melt butter in a medium saucepan over medium heat. Stir in garlic, onion and chicken livers. Reduce heat to low, and simmer approximately 10 minutes, until chicken livers are tender and no longer pink.
- Place chicken liver mixture in a blender with dry sherry, cream cheese, hot sauce, salt and pepper. Blend until smooth. Transfer to a medium bowl, cover and chill in the refrigerator approximately 2 hours before serving.

- Cook chicken livers in boiling water for about 7-10 minutes; drain well.
- Blend chicken livers with all other ingredients EXCEPT PARSLEY with hand mixer.
- Chill until firm; shape into a log and roll in parsley if desired.

Steps:
- Soak livers in milk for at least 2 hours and drain well.
- Melt 4 tablespoons butter in a saute pan over medium heat.
- Add onions and cook until soft (about 3 minutes).
- Add garlic and cook for about 1 minute.
- Add livers, 1 tablespoons peppercorns, bay leaves, thyme, salt & pepper.
- Cook stirring until livers are brown on outside and pink inside (about 5 minutes).
- Add cognac and cook until most of the liquid is gone.
- Cool.
- Discard bay leaves.
- In food processor puree liver mixture.
- Add remaining butter in pieces and pulsing to blend.
- Fold in remaining tablespoon of green peppercorns and adjust seasonings to taste.
- Pack in ramekins, cover and vacuum seal.
- Refrigerate or freeze.

QUICK AND EASY CHICKEN LIVER PATE
A very easy pate that's big on taste as opposed to those that boil the livers. Great on crackers and especially in Beef Wellington!

Steps:
- Melt butter in heavy sillet over medium heat.
- Add cleaned chicken livers and saute until tender, about 6-8 minutes. Cut ino quarters and cool.
- Save pan drippings.
- In a blender or food processor, combine liver pieces with the reserved pan drippings, onion, salt and pepper.
- Blend well for about 20 seconds.
- Optional: Blend in the hard boiled egg for a richer pate.
- Enjoy!
SIMPLE, DELICIOUS CHOPPED CHICKEN LIVER PATE
This chopped liver is is so easy, yet so simple to prepare. My family always looks forward to Passover dinner, because they know I'll be serving it with matzo crackers. It's also delicious on bagels the rest of the year. The pinch of sugar keeps the liver from having any bitter taste and makes such a difference when you use it.

- In a frying pan, heat oil. Add onions and sautee until golden brown. Remove to a plate. Add chicken livers to pan and fry until completely cooked, and no longer wet. Remove to a plate and let onions and livers cool completely.
- Once cool, place livers and onions together in a food processor. Process, until desired texture, taking care not to over process, as chopped liver should have a bit of texture.
- Place mixture in a bowl and add salt to taste, and a pinch of sugar. Add eggs and stir until blended.
- Chill several hours before serving.

CHICKEN LIVER PâTé
James Martin's luxuriously rich dinner party starter can be made up to two days in advance for fuss-free entertaining - serve with toasted brioche, cornichons and chutney.

- Heat 1 tbsp of the butter in a non-stick frying pan over a medium heat. When the butter is foaming, add the chicken livers and fry for 2 mins each side.
- Stir the crushed garlic, some of the thyme and Madeira into the pan with the livers. Fry for 2 mins, letting the Madeira simmer. Transfer the mixture to a food processor, reserve 200g of the butter and add the rest to the processor. Blend everything to a smooth paste. Season to taste, then spoon into 4 x 70ml clip-top jars.
- Melt the reserved butter in a medium frying pan and add the sliced garlic. Turn the garlic in the butter until slightly golden. Pour into the 4 jars of pâté, ensuring a few slices of garlic and the remaining thyme leaves go in each jar, and chill in the fridge for at least 4 hrs, or until set. Can be made up to 2 days in advance.
- Before serving, toast the brioche, then cut into triangular quarters for serving. Stir the diced apple through the chutney. Serve the pâté on small wooden boards with the toasted brioche, cornichons and chutney.

This is a great pate recipe! I have made it with dried cranberries and added 1/3 cup chopped pistachio nuts. Yummy!

- To make the pâté:.
- In a small, covered bowl, soak the cherries in the brandy overnight at room temperature.
- Then drain cherries, pressing out brandy, and reserve cherries and brandy separately.
- In a large sauté pan, heat the butter over medium-high heat until melted.
- Add the onions and cook, stirring often, about 3 minutes, or until translucent.
- Add the garlic and cook 30 seconds, and then add the livers.
- Sprinkle with salt, allspice and pepper.
- Cook about 2 minutes, turning livers as needed.
- Add reserved brandy and increase heat to high.
- Cook until livers are just done, and brandy/juice has cooked down until pan is almost dry, about 1½ to 2 minutes.
- Immediately remove from heat and place mixture in a food processor.
- Process until smooth, then add reserved cherries (and nuts) and pulse just enough to mix - not to chop them.
- Pack pâté in a 2-cup crock or pâté mold.
- Cover surface with plastic wrap and chill pâté at least 4 hours, can be prepared up to 3 days before serving.
- Serve with Sage Toast.
- To make Sage Toast:.
- Heat oven to 375 degrees.
- Meanwhile, heat oil and sage in a very small pan until just warmed.
- Remove from heat and let sit for 5 to 10 minutes to infuse sage flavour.
- Lay out baguette slices on a baking sheet and lightly brush slices with the oil.
- Sprinkle with salt and bake for about 10 minutes or until crisp.
BOURBON CHICKEN LIVER PâTé

- Melt 1 stick butter in a large nonstick skillet over moderately low heat, then cook onion and garlic, stirring, until softened, about 5 minutes. Add herbs, salt, pepper, allspice, and livers and cook, stirring, until livers are cooked outside but still pink when cut open, about 8 minutes. Stir in bourbon and remove from heat. Purée mixture in a food processor until smooth, then transfer pâté to crock and smooth top.
- Melt remaining 1/2 stick butter in a very small heavy saucepan over low heat, then remove pan from heat and let butter stand 3 minutes. If using herb garnish, put sprig on top of pâté. Skim froth from butter, then spoon enough clarified butter over pâté to cover its surface, leaving milky solids in bottom of pan.
- Chill pâté until butter is firm, about 30 minutes, then cover with plastic wrap and chill at least 2 hours more.

- In a medium saucepan, combine the chicken livers, onion, garlic, bay leaf, thyme and 1/2 teaspoon of salt. Add the water and bring to a simmer. Cover, reduce the heat to low and cook, stirring occasionally, until the livers are barely pink inside, about 3 minutes. Remove from the heat and let stand, covered, for 5 minutes.
- Discard the bay leaf. Using a slotted spoon, transfer the livers, onion and garlic to a food processor; process until coarsely pureed. With the machine on, add the butter, 2 tablespoons at a time, until incorporated. Add the Cognac, season with salt and pepper and process until completely smooth. Scrape the pâté into 2 or 3 large ramekins. Press a piece of plastic wrap directly onto the surface of the pâté and refrigerate until firm. Serve chilled.
