ZUCCHINI PARMESAN CRISPS

- Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray.
- Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet.
- Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.

- Preheat oven to 375°. In a large saucepan over medium-low heat, cook and stir zucchini and lemon juice until zucchini is tender, 15-20 minutes. Stir in sugar, cinnamon and nutmeg; cook 1 minute longer. Remove from the heat; set aside. , In a large bowl, combine flour and sugar; cut in butter until mixture resembles coarse crumbs. Stir 1/2 cup into zucchini mixture. Press half the remaining crust mixture into a greased 15x10x1-in. baking pan. Spread zucchini mixture over top; crumble remaining crust mixture over zucchini. Sprinkle with cinnamon. , Bake until golden and bubbly, 35-40 minutes. Cool in pan on a wire rack.

- PEEL AND CUT ZUCCHINI LENGTHWISE, STRIP OUT SEEDS, CUT IN 1/2" SLICES, COOK IN BOILING WATER UNTIL TENDER.
- DRAIN, COOL IN COLD WATER FOR 5 MINUTES.
- DRAIN, ADD SUGAR, FLOUR, SALT, CINNAMON, CREAM OF TARTER AND LEMON JUICE.
- STIR WELL.
- ADD PINEAPPLE AND JUICE.
- MIX WELL.
- DO NOT BEAT.
- POUR INTO A GREASED BAKING DISH (13X9" pan).
- SPREAD DRY CAKE MIX OVER TOP.
- DRIZZLE BUTTER OVER CAKE MIX.
- SPRINKLE NUTS ON TOP.
- BAKE AT 350F degrees FOR 60 MINUTES.

- In a large saucepan, over med heat, cook and stir zucchini and lemon juice until zucchini is tender. About 15-20 min. Stir in 1 cup of sugar, 1 teaspoon cinnamon and nutmeg and cook one min more. Remove from heat and set aside.
- Preheat oven to 375. Grease a 10 X 15 backing dish. In a large bowl, combine flour and 2 cups of sugar. Cut in butter with pastry blender or two knives until mixture resembles coarse crumbs. Stir in 1/2 cup of butter mixture into zucchini mixture. Press half of remaining butter mixture into bottom of prepared pan. Spread rest of butter over zucchini. sprinkle with 1 teaspoon of cinnamon.
- Bake 35-40 min., or until top is golden brown. Serve warm or cold.

A co-worker brought this in to the office a few years back. It wasn't until the pan was almost gone & everyone was raving about the delicious apple cobbler, that she told us all it was actually zucchini! The best part of this is, it is less messy & easier to peel zucchini than apples!!

- 1. Preheat oven to 375 degrees. Lightly spray a 10x15 pan with nonstick spray.
- 2. In a large saucepan, over medium-low heat, cook and stir zucchini and lemon juice for 15-20 minutes, or until tender. Add sugar, 1 tsp. cinnamon, and nutmeg; simmer for 1 minute longer. Remove from heat and set aside.
- 3. In a large bowl, combine the flour, 1 tsp. cinnamon and sugar. Cut in butter until mixture resembles coarse crumbles. Stir 1/2 cup into zucchini mixture. Press half of remaining crust mix into greased pan. Spread zucchini filling over top. Crumble remaining crust mixture over the zucchini filling.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
