FANCY PIMENTO CHEESE

I had the best pimento cheese at a resort in North Carolina and replicated it in my kitchen. Tastes great with flatbread crackers, topped with chow chow and a slice of pickled okra! Try it!

Fancy Pimento Cheese image

Steps:

  • Using the smallest holes of a box grater, grate half the Cheddar cheese. Grate the remaining Cheddar cheese on the next larger size holes.
  • Stir together the Cheddar cheese, chives, roasted red pepper, cream cheese, pickle juice, mayonnaise, hot pepper sauce, and black pepper in a bowl until evenly combined.

Five-Cheese Pimento Cheese image

Steps:

  • Drain peppers, reserving liquid, then finely chop if whole.
  • Process shallot, cream cheese, mayonnaise, Miracle Whip, Worcestershire, salt, hot sauce, and 2 Tbsp. pepper liquid in a food processor until very smooth. Add cheeses and pulse until just combined. Add peppers and pulse until just combined. Serve with crackers alongside.
  • Do Ahead
  • Pimento cheese can be made 5 days ahead; cover with plastic, pressing onto surface, and chill.

3/4 cup jarred whole or chopped pimento peppers (about 10 1/2 ounces)
1/2 small shallot, grated
2 ounces cream cheese, softened
6 tablespoons Hellmann's mayonnaise
6 tablespoons Miracle Whip
2 teaspoons Worcestershire sauce

Steps:

  • Finely grate cheeses into a large bowl. Stir in pimentos, black pepper, cayenne, and salt to taste with a fork. Then stir in mayonnaise, mashing mixture with fork until relatively smooth. (It should be flecked with small pieces of pimento.)
  • Scrape spread into a crock or jar and chill, covered, at least 2 hours to allow flavors to develop.
