Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- In a medium bowl, mix together the peas, pimentos, water chestnuts, cream of celery soup and onion. Pour into a 1 1/2 quart casserole dish. Top with shredded cheese. In a separate bowl, mix together the cracker crumbs and margarine; sprinkle evenly over the cheese.
- Bake for 30 to 40 minutes in the preheated oven, until browned and bubbly.

- Mix soup, sour cream and 1/3 cup 4 cheese Mexican blend and salt together.
- Fold in peas.
- Spread into an 8X8 inch baking dish.
- Sprinkle with 3/4 cup cheddar cheese.
- Mix melted butter with cracker crumbs.
- Spread over top of cheese.
- Sprinkle Cayenne pepper over the top if using.
- Bake at 350 Degrees until bubbly and golden brown, about 30 minutes.

- Cook peas according to package directions.
- In a skillet, cook bacon until crisp, then remove from pan and drain on paper towels.
- Add onion and mushrooms to skillet and saute until almost done.
- Add flour, stir and cook for 1 to 2 minutes.
- Add cream, cook and stir to consistency of a medium white sauce.
- Add all of mixture to peas and stir in bacon.

- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and carrots, cover, and steam until tender, 4 to 6 minutes. Drain and set aside.
- Preheat oven to 350 degrees F (175 degrees C).
- Melt 2 tablespoons butter in a large skillet over medium heat. Stir flour into butter to make a smooth mixture; cook for 1 minute. Stir milk, sugar, salt, and black pepper into the flour mixture; continue cooking and stirring until the sauce thickens, 2 to 3 minutes. Fold cauliflower, carrots, peas, onion, green beans, green bell pepper, and garlic into the sauce to coat. Mix 1 cup Cheddar cheese into the vegetable mixture. Transfer the mixture to a 2 1/2-quart casserole dish. Sprinkle remaining Cheddar cheese over the dish.
- Bake in preheated oven until top is golden and cheese is bubbly, about 30 minute.

CRISPY-ON-THE-TOP TUNA AND GREEN PEA CASSEROLE (ROCCO DISPIRITO)
This recipe is based on one of Rocco Dispirito's from his book, Now Eat This! Diet. He says in its intro, "Who grew up eating tuna casserole? Raise your hands. That's just about everybody. Okay, this is not your mother's tuna casserole...nor does it use Tuna Helper. But it does taste just as wonderful - without losing any of its comfort-food flavor. I've wowed it up a bit with Dijon mustard, and I used whole wheat panko bread crumbs for that traditional crunchy topping. If you can't find these particular bread crumbs, you can always toast leftover whole wheat bread and break it into crumbs with a rolling pin." I made this the other night with French's French Fried Onions because I was out of panko bread crumbs. We loved this dish and it has become a new staple dish for us. - Prepare an 8x8x2-inch baking dish by spraying with cooking spray and set aside.
- Cook pasta according to package directions in a large pot of boiling salted water. Drain.

BLACK-EYED PEA GREEN BEAN CASSEROLE
I started experimenting more with black-eyed peas and have really come to love them. They're so rich in flavor and very filling! Greenbeans are my favorite vegetable and I think that a greenbean/wax bean blend would also be great for this casserole. This would be a great potluck dish, even non-vegetarians may like it. And lately I've had this real hankering for french-fried onions, so here goes!

- First cook the black-eyed peas (no pre-soaking required!) by placing the garlic and oil in a pot and simmer until lightly browned.
- Pour in the water and black-eyed peas, mix well. Add the seasonings.
- Cover the pot and let it cook for about 30-45 minutes, or until the peas are tender but not mushy.
- For the greenbeans, if using canned, just rinse and drain. For fresh/frozen, just steam them to their desired consistency. I like them kinda soft but other people may like them chewier.
- While the peas are in their last 10-15 minutes of cooking time, preheat the oven to 350°F.
- In a 2-qt baking dish, mix the mushroom soup and yogurt together.
- Blend the soy sauce in next.
- When the soy sauce is incorporated in the cream sauce, add the spices.
- Drain any excess water from the black-eyed peas and put them into the baking dish, mixing well.
- Mix the greenbeans in too.
- Top with french-fried onions and bake for 25-30 minutes or until the cream sauce is bubbly.
