SALMON BROCCOLI PASTA
Fast and healthy? one dish meal that's also a kid pleaser at my house. I usually use left over salmon, which makes it even faster. If you don't have left over salmon, you can either use some smoked salmon (will have to adjust seasonings since it is salty), or bake some while you cook the pasta (season with olive oil, minced garlic, salt and pepper and bake at 350 degrees F until it flakes easily with fork). You could also sub the broccoli with other veggies like frozen peas (just skip the boiling and add straight into the sauce) or asparagus (cut it into 1" pieces and boil until crisp-tender). Any type of pasta will work, penne or corkscrews, which are easier to toss but in a pinch even spaghetti will work. Another sugguestion is to add fresh snipped chives for more flavor at the end of cooking.

- Boil water in a large pot (cook broccoli then use same water to cook pasta to save time). Pull the broccoli apart into small trees. Cook broccoli for about 5 minutes and take out and drain and run under cold water.
- Keep the pot of water on and boiling then add salt and cook pasta according to package directions; drain and drizzle a little olive oil to keep from clumping, set aside.
- Melt the butter and add the olive oil using low heat in a large sauce pan (or use the same pot to reduce dishes).
- Saute garlic and cook for about 4 minutes, add in half and half, a little salt, and cook just until half and half is heated up.
- Add the broccoli, salmon, and pasta, let that soak up the sauce.
- Next add the ricotta cheese and mix it inches Season with salt and pepper to taste.
- Add chives if desired.
- Sprinkle with parmesan cheese and serve.

LINGUINE WITH CHICKPEAS, BROCCOLI AND RICOTTA
The broiler is an unsung kitchen hero because it imparts a flavorful char in half the time that grilling takes. In this 20-minute recipe, kale, broccoli and chickpeas crisp under the broiler while the pasta water boils. Make sure to spread out the vegetables and chickpeas so they have room to caramelize properly instead of steaming (the more crunchy bits, the better). Finish by tossing the pasta and vegetables with a quick sauce of butter, lemon zest and fresh ricotta, a rich and creamy complement to the charred vegetables. Enjoy with crusty bread, good wine and a sense of accomplishment - you just got dinner on the table in under a half hour.

- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, and drain the pasta.
- Meanwhile, heat the broiler and set a rack roughly 8 inches from the heat source. In a large bowl, toss the broccoli, chickpeas, garlic, red-pepper flakes and 1/3 cup oil until evenly coated. Season with salt and pepper. Spread out evenly on one sheet pan. Add the kale to the same bowl, and toss to coat in any residual oil. Drizzle with more oil as needed and toss to coat evenly. Spread out in an even layer on the second sheet pan.
- Working with 1 sheet pan at a time, broil the broccoli and chickpeas, tossing halfway through cooking, until the chickpeas are toasty and the broccoli is tender and charred, 5 to 7 minutes. Broil the kale until just charred and crisp, about 5 minutes.
- Zest the lemon, halve it, then cut 1 half into 4 wedges. Squeeze the juice from the lemon half over the roasted vegetables and season to taste with salt and pepper.
- Return the pasta to the pot. Add the 1/4 cup reserved pasta cooking water, the ricotta, butter and lemon zest and toss until well combined. Add the roasted vegetables and toss, adding more pasta water as needed.
- Divide among four bowls. Season with flaky sea salt and pepper, and serve with lemon wedges for squeezing on top. Drizzle with more oil, if desired.

- Preheat the oven to 190C/gas 5/fan 170C and get out an ovenproof dish (measuring 20 by 30cm, and about 5cm deep). Meanwhile, put a large pan of water on to boil for the pasta. When it is boiling rapidly, tip in the pasta with a generous sprinkling of salt. Give it a stir, return to the boil and cook for 6 minutes. Add the broccoli, then return the water to the boil and cook for 4 minutes more, until the broccoli is on the firm side of just tender. Drain well.
- While the pasta is cooking, put the butter, flour and milk in a large pan and heat, whisking or stirring continuously, until it thickens to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers (if using), anchovies (if using) and basil, then add the pasta and broccoli and season well.
- Halve the salmon fillets widthways (you will see that there is an obvious divide on each fillet) then place the pieces in a single layer on the base of the ovenproof dish. Spoon the broccoli mixture on top, then scatter with the grated cheddar. (You can chill this for up to 4 hours if you want to get ahead.)
- Bake for 30 minutes until the mixture is just starting to bubble round the edges and the mixture is pale golden - don't let it go too dark or the fish will overcook.

SHEET-PAN SPICY ROASTED BROCCOLI PASTA

- Brush salmon fillets evenly with lemon juice, and bake for 10-20 mins (depending on thickness of fillets) at 400 F, or until fish flakes easily with a fork.
- Let cool slightly, and crumble fish into bite sized pieces.
- Meanwhile, put ricotta cheese, parmesan cheese, milk, garlic and pepper into a blender and blend until smooth.
- Then pour into a saucepan over low heat until warmed (do not let boil.) If sauce seems too thick, add small amounts of milk until it reaches desired consistency.
- Steam broccoli chopped into small pieces until just tender, and stir into cheese sauce.
- Cook pasta in a large pot of boiling water until el dente.
- Toss pasta and cheese/broccoli mixture until well mixed.
- Gently stir in salmon pieces, or if desired, sprinkle on top of individual plates before serving.
- Serve Immediately.
