PEAR SAUCE
Serve this sweet sauce with breakfast breads or on top of oatmeal. If you prefer a chunkier sauce, start with slightly smaller pieces of pear, and don't use a food processor.

Steps:
- In a medium saucepan with a lid, combine pears, 1/4 cup water, lemon zest, and 1/8 teaspoon coarse salt. Bring to a simmer over medium heat. Cover, and cook until pears are soft, 10 to 12 minutes. Uncover, and coarsely mash with the back of a spoon. Continue cooking until most of the liquid has evaporated, about 5 minutes.
- Transfer mixture to a food processor, and blend until smooth; add lemon juice and honey to taste. Serve warm, or let cool, then cover and refrigerate up to 1 week. Use as you would applesauce.
STEVE'S FALL PEAR SAUCE
It's fall and there are a lot of overripe pears around, so try this recipe! You will love it! It is incredibly easy and you will wonder why you haven't made it before, once you taste it. Day-old, ugly, ripe pears that you would never eat are great for this recipe. Also, and most of all, make your food with love and encourage people as they make their own creations. - Combine pears and water in a pot; bring to a boil. Reduce heat and simmer until pears begin to break down, about 25 minutes. Stir lemon juice and cinnamon into pears. Blend pears with a hand blender or by transferring to a blender until smooth.

PORK TENDERLOIN WITH CARAMELIZED PEARS AND PEAR-BRANDY CREAM SAUCE

- Place pork slices between plastic wrap. Using meat mallet, pound pork slices to 1/4-inch thickness.
- Melt 2 tablespoons butter in large nonstick skillet over high heat. Add pears and sugar; sauté until pears are tender and deep golden, about 8 minutes.
- Melt 1 tablespoon butter in another large nonstick skillet over high heat. Season pork with salt and pepper. Working in batches, add pork to skillet; sauté just until cooked through, about 2 minutes per side. Transfer to plate. Cover. Reduce heat to medium. Melt 1 tablespoon butter in same skillet. Add shallots and thyme; sauté 2 minutes. Add eau-de-vie; boil until reduced to glaze, scraping up any browned bits, about 2 minutes. Add cream and pear nectar; boil until thickened to sauce consistency, about 5 minutes. Season with salt and pepper.
- Reheat pears if necessary. Spoon into center of platter. Arrange pork around pears. Pour sauce over pork.
QUICK & EASY CARAMELIZED PEARS

- In a large skillet, melt butter over medium-high. Add pears, one cut side down, and cook until browned, then reduce heat to medium and cook 3 minutes. Turn pears to other cut side and cook 4 minutes. Add sugar and 1 tablespoon water, swirling pan to combine. Turn pears skin side down and cook until sauce is thickened slightly, 2 minutes. Stir in vanilla and pinch of salt. Serve warm with ice cream.

This is a good way to use your ripe or over ripe pears. I use this for my pear bar recipe. It can also be used in preparing low fat baked goods. Make a lot and freeze it while the pears are in season.

PEAR BARS WITH PEAR SAUCE
This is a great way to use ripe or over ripe pears. I had a hard time with submitting it so to clarify, 1-1/2 cups of the pear sauce is used in the bar recipe. You use the other 1-1/2 c of sauce as a garnish.

- Combine flour, sugar, baking powder, cinnamon, soda, salt, and cloves. Mix well.
- Stir in eggs, oil, and pear sauce till well mixed.
- Spread batter in sprayed 9 by 13.
- Bake at 350° for 25-30 minutes or till center tests clean.
- Sprinkle with powdered sugar, cut into bars and serve with ice cream or whipped cream and extra pear sauce.

- Sprinkle chicken with salt and pepper. In a large skillet over medium heat, cook chicken in oil 5-6 minutes on each side or until a thermometer reaches 170°. , Meanwhile, in a large saucepan, cook bacon until crisp. ROAST PORK WITH PEAR SAUCE
You know pork's good with apple sauce, but have you tried it with pears? The sauce is also good with game or duck

- Heat oven to 240C/fan 220C/gas 9. Dry the skin of the pork with kitchen paper, then rub with the oil and season generously with sea salt. Sit the pork in a roasting tin, then roast for 20 mins. Reduce the heat to 190C/fan 170C/gas 5 and continue to roast the pork for 1 hr 20 mins until cooked and skin has turned to crisp crackling. If the skin isn't crisp enough, turn the oven back up to 240C/fan 220C/gas 9 for a further 10 mins.
- While the pork is roasting, make the pear sauce. Heat the butter in a saucepan and sizzle the pear chunks and fennel seeds together until they start to brown. Add the perry or cider and sugar. Bubble everything down until the perry is reduced and has become sticky and caramelised, and the pear is tender and starting to collapse. If the pears don't break down, use a potato masher to mash into a rough purée. Serve the sauce in a bowl alongside the pork with your favourite side dishes.

- Peel, core, and chop coarse 1 of the pears. In a small dry non-stick skillet sauté the pear over moderately high heat, stirring occasionally, for 5 to 6 minutes, or until it is tender and golden, and transfer it to a small food processor. In the skillet, cleaned and dried, melt the sugar over moderately low heat, stirring with a fork, and cook the syrup, swirling the skillet gently, until it is a light caramel. Remove the skillet from the heat, pour the heavy cream carefully down the side of the skillet, and whisk the mixture until the caramel is dissolved and the mixture is smooth. Add the caramel to the food processor, blending it with the cooked pear until it is smooth. Stir in the vanilla and keep the sauce warm.
- Peel, halve, and core the remaining 2 pears. In the skillet, cleaned, melt the butter over moderately low heat, add the zest and the pears, and cook the pears for 4 to 5 minutes on each side, or until they are tender. Divide the pears between 2 plates and spoon the pear sauce over them.
