Steps:

  • Put the tomatillos in a blender first, then add the remaining ingredients. Pulse a few times, then blend until the salsa is very smooth, at least 1 minute. Season to taste with additional chile and salt, and blend again.

1/2 pound tomatillos (5 or 6), husked, rinsed, and coarsely chopped
1/2 cup coarsely chopped cilantro
2 fresh jalapeño or serrano chiles, coarsely chopped (including seeds), or more to taste
1 large garlic clove, peeled
2 tablespoons chopped white onion
1 1/2 teaspoons kosher salt

SALSA VERDE O ROJA CRUDA

When tomatoes are at their best, we recommend making the salsa roja. During the rest of the year (even in winter), tomatillos still have plenty of flavor and can be your go-to salsa base.

Steps:

  • If making salsa verde, blend tomatillos, avocado, onion, garlic, chile, cilantro, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a blender on medium-low speed until salsa is smooth. Taste and season with more salt if needed. (Do not blend on higher than medium speed or your salsa will be airy and taste like a smoothie.)
  • If making salsa roja, blend tomatoes, onion, garlic, chile, cilantro, 1 Tbsp. lime juice, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt in a blender on medium-low speed until salsa is smooth. Taste and season with more salt and lime juice if needed.
  • Do Ahead: Salsa can be made 2 days ahead. Transfer to an airtight container; cover and chill.

12 oz. tomatillos (about 8 medium), husks removed, rinsed, quartered, or 12 oz. tomatoes, cored, quartered
½ medium avocado (optional; for making salsa verde)
¼ medium white onion, coarsely chopped
1 garlic clove
1 serrano chile, coarsely chopped
¼ cup (packed) cilantro leaves with tender stems
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, plus more
1-2 Tbsp. fresh lime juice (optional; for making salsa roja)

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Lay tomatillos, Anaheim peppers, onions, jalapeno peppers, and garlic on a large rimmed baking sheet.
  • Broil in the preheated oven until tomatillos release their juices, 7 to 10 minutes. Remove tomatillos and garlic from the baking sheet; flip Anaheim peppers, jalapeno peppers, and onions and return to the oven. Continue to broil until peppers are blackened, about 5 minutes more. Remove from the oven and let cool until safe to handle, about 5 minutes.
  • Peel away blackened parts from vegetables without taking off too much flesh. Transfer tomatillos, Anaheim peppers, onions, jalapeno peppers, garlic, cilantro, lemon juice, and salt to a food processor and pulse until well combined and chopped. Refrigerate salsa until cold, at least 30 minutes.

SALSA CRUDA

I made this salsa for a Mexican themed party we had for our family. Everybody loved it. There really is nothing like fresh salsa. It beats the canned stuff any day. For a time-saver,I didn't roast the jalapenos it calls for,but just added them as is.I also couldn't find the dry chilis so omitted those as well.It still came out perfect.Add as many or as little jalapenos as you want depending on the strength of youre taste buds.Bon apetite.

Steps:

  • Remove and discard the papery husks from the tomatillos; cut each in half and remove the hard parts surrounding the stem. Trim away and discard roots and tough stems from cilantro. Place tomatillos and cilantro in a blender along with lettuce, serrano peppers, and garlic clove. Slice the avocado open vertically, and twist the halves apart. Carefully whack a knife into the pit, twist to loosen, and remove the pit. Gently run a spoon between the flesh and the skin of the avocado until the flesh comes out in one piece. Repeat with the other half. Into the blender, add avocado halves, juice from the lime, and shallot.
  • Blend to a chunky purée, 30 seconds, adding ½ teaspoon salt halfway through with the motor running. Taste and add remaining salt (or more) as needed. Makes about 2 cups Salsa Verde. (Store in airtight container for up to two days in the refrigerator.)

10 small tomatillos
1 bunch cilantro, small
1 head little gem lettuce, small, may substitute 4 leaves of romaine
2 serrano chiles, de-stemmed and cut in half
1 clove garlic, large, peeled
1 ripe avocado
1 lime
1 shallot, minced
1 teaspoon fine sea salt, divided, plus more to taste
