This recipe came from Lady Bird Johnson. I serve them each year on my Christmas Eve buffet. (They can be frozen.)

Steps:
- Preheat oven to 350.
- Cut butter into flour.
- Add cheese and seasonings.
- Fold in cereal.
- Drop by small spoonfuls on ungreased cookie sheets and flatten with back of spoon.
- Bake for 10-15 minutes.
- Don't let them get too brown!

SAVANNAH CHEESE WAFERS
Martha Nesbit created the recipe for these "addictive" wafers, which she prepared for a special dinner at the American Harvest Restaurant in New York's Vista International Hotel. This is a great do-ahead recipe, since the dough can be frozen and you can bake a few whenever you want to offer something along with cocktails. Adjust the cayenne to your preference. Originally from an April 1988 issue of Bon Appetit magazine.

Steps:
- Using electric mixer, beat butter in medium bowl until light and fluffy.
- Resift flour with salt and cayenne;add to butter and beat just until blended.
- Add cheese and blend just until combined; do not overmix (dough will be crumbly).
- Gather dough into a ball; divide into fourths and flatten into disks.
- (Can be prepared ahead.Wrap and refrigerate up to 3 days or freeze up to 2 months. Thaw dough before continuing.).
- Preheat oven to 400 degrees.
- Roll 1 dough piece out between pieces of waxed paper to thickness of 1/8 inch.
- Cut out rounds using a 2 inch plain or scalloped cookie cutter.
- Repeat with remaining dough.
- Gather up scraps, reroll and cut out additional rounds.
- Transfer rounds to nonstick baking sheets (or to parchment covered regular baking sheets) and bake until golden, about 12 minutes.
- Cool slightly and serve slightly warm or at room temperature.

CHEESE WAFERS
Steps:
- Preheat oven to 350 degrees. Combine the flour, cayenne, and salt in a large shallow bowl. With a pastry blender, cut in the butter until the mixture is the texture of coarse meal. Add the cheese and rub into the flour-butter mixture gently with your fingertips until a small bit of dough, when pinched together, will hold its shape. Roll into 3/4-inch balls, place 1 1/2 inches apart on ungreased baking sheets, then flatten into rounds 1/4-inch thick by pressing with a flat-bottomed glass that has been dipped into flour. (You'll have to keep dipping the glass into flour to keep the dough from sticking to it.) Bake uncovered 10 to 12 minutes until pale tan. Transfer the wafers at once to wire racks to cool, then store airtight.

- Preheat oven to 350.
- In food processor, pulse 1/2 cup cheese until it resembles coarse meal. Remove from bowl. Add pecans to work bowl and pulse until pecans resemble coarse meal.
- In a large bowl, combine cheese, pecans, flour, margarine, salt, pepper and paprika, mixing well. Add cereal to mixture, stirring gently just until combined.
- Shape dough into 1-inch balls. Place 2 inches apart on ungreased baking sheets. Flatten dough balls gently with a fork. Place pecan half on top of indentation.
- Bake for 13 minutes. Remove to wire racks and cool.

BUTTERY CHEESE WAFERS
These little snacks are addictive! They're easy and cheesy, lightly crisp, and the recipe doubles very nicely. I like to vary them a little by adding different dried herbs to the basic mixture; thyme seems to be the universal favorite. Prep time includes chilling time.

- Combine the butter and cheese; mix in the Worcestershire sauce, flour, garlic powder, salt and dried herbs (if using).
- Roll mixture into a cylinder about 7 inches long and wrap up in waxed paper.
- Refrigerate until firm.
- Preheat oven to 375 degrees F.
- Slice the chilled mixture into 1/4 inch thick slices and place on a greased baking sheet.

PARMESAN AND ROSEMARY WAFERS
These crisp, tasty little wafers from are totally addictive, and fabulous with drinks at any time! These are a must for any good party. Everyone will be constantly nibbling, so make plenty. They can be made up to 2 days in advance, but must be chilled in an airtight container. Always use baking parchment or they will stick and cause a panic!

- Set the oven to 400°F Put the rosemary and Parmesan in a bowl and mix. Place teaspoons of the mixture on to the prepared baking sheets and flatten out into circles, allowing room in between each for the mixture to spread.
- Bake for 8-10 minutes until golden. Remove from the oven and let cool. Gently peel off the paper and serve.

Steps:
- Preheat oven to 375 degrees.
- Put the walnuts in a food processor and chop finely.
- Remove and set aside.
- Add flour plus the extra 1 tbs of flour, salt & pepper to the processor bowl.
- Cut the butter into small pieces and add to the flour mixture.
- Mix in short bursts until the mixture resembles fine breadcrumbs.
- Coarsely grate in cheese, add the reserved walnuts and mix quickly to form a dough.
- Turn mixture on to a lightly floured surface and roll out thinly.
- Using a 2 1/2 in round cookie cutter cut the dough into rounds and place on baking trays.
- Brush the tops with beaten egg.
- Bake in preheated 375 degree oven for about 10 minutes until golden.
- Cool and store in airtight container.
