SKILLET STUFFED CABBAGE
In the mood for stuffed cabbage was not in the mood for waiting on them to get done, so I improvised!

Steps:
- 1. In large skillet, saute onion with butter, when onions become clear add ground meat to skillet seasoning with cajun seasoning. When meat is browned stir in cooked rice, topped with cabbage, can of Rotel tomatoes and water. Cover and cook on medium low heat for 25 - 30 minutes, until cabbage is tender.

SKILLET STUFFED CABBAGE
Many people, me included, love stuffed cabbage but don't like all that tedious rolling. Here's a recipe that gives flavor without the work.

- In a 4 or 5-quart saucepot, cook ground beef and onion over medium-high heat, stirring frequently for 5 minutes or until beef is cooked through, drain any fat.
- Stir in rice mix, water and allspice.
- Bring mixture to a boil then reduce heat to low.
- Cover and simmer 10 minutes; stir.
- Top with shredded cabbage and press down gently.
- Pour spaghetti sauce over cabbage.
- Cover and cook for 15-20 minutes until cabbage is just tender.

'UNSTUFFED' CABBAGE WITH A KICK
This is an alteration on a typical stuffed cabbage recipe. It's healthy, low-fat, low-carb, and a bit spicy. You can't go wrong with this recipe! You may omit the red pepper and cayenne if you do not like spicy foods, or increase like we do! We serve this over brown rice to make it more of a whole meal. We love it! I used roasted garlic-flavored tomato sauce for extra 'kick.'

- Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer cooked turkey to a bowl.
- Heat olive oil in the skillet over medium heat; saute onion in hot oil until translucent, about 5 minutes. Add garlic to onion; saute until fragrant, about 1 minute.
- Pour diced tomatoes and tomato sauce over the onion mixture; season with Italian seasoning, basil, red pepper flakes, cayenne pepper, salt, and black pepper. Reduce heat to medium-low and simmer tomato mixture until the tomatoes are softened, about 10 minutes.

Cabbage, rice, hamburger, garlic, and onions! I love cabbage rolls, but they just take too much time and most recipes make way too much for my hubby and I. So I came up with this skillet dinner one Sunday afternoon.

This is a quick and easy main dish. My kids don't even like cabbage, but they love this. I usually try to serve it with green beans, new potatoes, corn, and a pan of corn bread. They eat over half the pan every time. Also, the longer it stands the better it tastes.
