- Melt butter in a large skillet over medium heat; cook and stir the onion in the melted butter until translucent, 5 to 8 minutes. Stir in the zucchini and yellow squash; cook until tender, 10 to 15 minutes. Mix in the tomatoes and cook until they start to break down, about 5 more minutes. Season with kosher salt and black pepper.

- Preheat oven to 375 degrees F (190 degrees C).
- Cut the zucchini and squash into long, thin layers. Lightly grease a 7x11-inch baking dish and layer the squash, zucchini, onion and tomatoes into the baking dish. Sprinkle with cheese and add pats of butter between each layer of vegetables, and season each layer with salt and ground black pepper to taste.
- Continue this layering process until all the vegetables are used up and top this off with the remaining butter and cheese.
- Cover and bake at 375 degrees F (190 degrees C) for 20 to 30 minutes, or until vegetables are to desired tenderness and cheese is melted and bubbly.

- Preheat oven to 375 degrees F (190 degrees C). Lightly butter a 9x9-inch pan.
- In a large bowl, combine Cheddar, Parmesan, oregano, basil, and garlic. Season with salt and pepper, and set aside.
- Arrange half of the zucchini slices in the pan. Sprinkle 1/4 of the cheese and herb mixture on top. Arrange half of the tomatoes, and top with another 1/4 of the cheese mixture. Repeat layers.
- Melt butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in breadcrumbs; cook until they have absorbed the butter. Sprinkle on top of casserole.
- Cover loosely with foil, and bake in a preheated oven for 25 minutes. Remove foil, and bake until the top is crusty and the vegetables are tender, about 20 minutes.

- In a bowl, combine the first seven ingredients; set aside. In a large skillet, saute zucchini in 1 tablespoon of butter until crisp-tender, about 5 minutes; drain. Arrange the zucchini in a greased 8-in. square baking dish; sprinkle with half of the cheese mixture. Top with tomatoes and remaining cheese mixture., In a saucepan, saute onion in remaining butter until tender; add bread crumbs and toss to combine. Sprinkle over top. Great crowd pleaser that is easy to make. If you substitute rice flour this recipe should work well for your gluten restricted friends. Most of my other squash casseroles call for "soda" crackers.

- Preheat oven to 350°F
- Lightly grease a shallow 2 1/2 quart dish and set aside.
- Combine squash, zucchini, onion and bring to a boil in a large saucepan.
- Reduce heat to low and simmer 10 minutes or until vegies are tender. Drain well and set aside.
- Combine tomatoes, flour, sugar, salt, garlic, paprika, and pepper. Saute until tomatoe liquid is slightly reduced, about 5 minutes.
- Gently combine beaten egg, mozzerella and cheddar cheese with squash, zucchini, and onion mixture. Then add the tomato reduction. Be gentle so vegies are not torn into mush. Top with Parmesan cheese.
- Bake for 30-40 minutes. Let stand for 10 minutes before serving.

- Preparation step: After you slice your zucchini, layer them on a baking rack on top of a baking sheet. Sprinkle salt on top of them generously and let them sit for at least 20 minutes. This helps draw out the water and makes for a less watery casserole. Rinse and dry the slices. If you skip this step, just expect a more watery casserole. (It will be slightly watery because of the tomatoes as it is.)
- Preheat your oven to 350 degrees. Butter or lightly oil a medium baking dish. Lay half of the zucchini slices on the bottom of the baking dish. Top with about 1/5 of the thyme, sprinkle with salt and pepper, and then add about 1/5 of the goat cheese crumbles. On top of that layer, add a layer of tomatoes and again top with thyme, salt, pepper, and goat cheese. Next, add a layer of summer squash and top with more thyme, salt, pepper, and goat cheese. Repeat with another layer of tomatoes and a final layer of zucchini. Bake, covered with aluminum foil, for 30 minutes. Remove the aluminum foil and bake, uncovered, for an additional 15 minutes. Enjoy!
