- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a broiler pan.
- Stir the bread crumbs, Parmesan cheese, seasoned salt, and garlic powder together in a shallow dish such as a pie plate. Pour the olive oil into a separate shallow dish. Dip the t-bone steaks in the olive oil on both sides; allow excess to drip off. Press the steaks into the bread crumb mixture, and place onto the prepared broiler pan.
- Bake on the middle rack in the preheated oven until the steaks have cooked to your desired degree of doneness, about 15 minutes for medium. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium.

MEXICAN STYLE TAMPIQUENA STEAK

Steps:
- Mix together the vegetable oil, garlic, lime juice, salt, black pepper and white onion.
- Coat the meat with the onion mixture, cover and marinate in the refrigerator for 24 hours.
- Preheat the oven to 350°F
- Spread the tortillas with enchilada sauce (reserving a little), fill with cheddar cheese (reserving a little) and roll up over the cheese.
- Place the filled tortillas in an ovenproof dish. Spread with the remaining enchilada sauce and sprinkle over the reserved Cheddar.
- Bake in the oven for 5-10 minutes until the cheese has melted.
- Meanwhile, preheat a grill or griddle pan until very hot. Cook the steak on the grill or griddle until cooked to taste.
- Serve the freshly grilled steak with the tortillas and guacamole, garnishing with the green chili.

MEXICAN FLANK STEAK

- Pound meat on both sides with a meat mallet then sprinkle with salt, garlic salt and pepper.
- Unwrap each of the tomales and place in a medium mixing bowl with sauce.
- Roll up each steak from one short side to the other side (like a jelly roll cake).
- Tie securely each steak closed with string or skewers.
- Place Flank steak in slow cooker.
- Dissolve bouillon in hot water.
- Combine broth with tomato sauce and hot pepper sauce.
- Pour over steaks.
- Cook on low heat for 8 to 10 hours.
- Lift out meat rolls and remove ties or skewers.
- Pour cooking liquid into saucepan and don't forget to skim off fat.
- Blend the cornstarch in cold water and add to cooking liquid.
- Cook and stir till thick.
- Serve meat with broth and shredded cheese sprinkled on top.

- Toast the cumin seeds in a medium saute pan over medium-low heat for 5 minutes, or until fragrant.
- In a blender, combine the cumin seeds, jalapenos, garlic, pepper, lime juice, and salt. Pulse the blender to finely chop ingredients. Add the oil and cilantro and puree until smooth.
- Lightly score both sides of the meat with a knife so that the marinade will penetrate. Place the meat in a large plastic bag or bowl, pour in the marinade, and coat well. Marinate in the refrigerator for 24 to 48 hours.
- Preheat an outdoor grill for high heat and lightly oil grate.
- Remove the meat from the marinade and discard the remaining marinade. Cook on high, 1 to 2 minutes per side, to sear the meat. Turn the heat down to low and cook for an additional 3 to 4 minutes per side, or until the it has reached the desired doneness.

- Meanwhile, combine cumin, garlic powder, taco sauce, salsa, salt and rub over both sides of steak.

- Blend all marinade ingredients in a food processor.
- Taste, and adjust seasonings if desired.
- Score each side of the steaks 1/8 to 1/4-inch deep.
- Reserving 2/3 cup marinade mixture as sauce, place steak in large resealable plastic bag with remaining marinade mixture.
- Seal bag and marinate in refrigerator for at least 30 minutes.

- Heat olive oil in pan.
- Sautee onion, garlic and tomato for 3 minutes or until tender.
- Set mixture aside.
- Preheat oven to broil.
- Cut green chile into long strips and set aside.
- Sprinkle seasoning salt on both sides of steak.
- Broil steaks (I broil the thin cuts 3-4 minutes) on one side.
- Remove from oven and place mixture of tomato, onion and garlic evenly on unbroiled side of steaks.
- Top with 2-3 strips of green chile.
- Next,place a slice of cheese on top of each steak (you will cover mixture and green chile strips with cheese slice.) Broil until steak is done and cheese is melted (about 3 minutes).
- Serve and enjoy!
