FROSTY STRAWBERRY SQUARES

This is a recipe my mother has made for years. She always likes to tell people this dessert was served at John Steinbeck's house. It is a very light and refreshing treat after a heavy meal or on a warm summer night. The crust is cooked, but the top is frozen so it tastes similar to strawberry ice cream. This dessert needs to be frozen for at least six hours, so plan accordingly.

Steps:

  • Combine flour, brown sugar, walnuts and melted butter.
  • Place in a 9x13" baking dish and bake at 350 degrees for 20 minutes, stirring occasionally.
  • Take out 1/3 of mixture and set aside. Press remaining mixture into baking dish.
  • For filling: Whip whipping cream until peaks form; set aside.
  • Combine egg whites, sugar, strawberries and lemon juice (MAKE SURE MIXER BLADES ARE CLEAN AND DRY OR EGG WHITES WILL NOT WHIP).
  • Beat at high speed until stiff peaks form, about 10 minutes.
  • Fold in whipped cream.
  • Spoon over crumb mixture.
  • Sprinkle 1/3 crumb mixture over top.
  • Freeze six hours or over night.

Steps:

  • For the filling: Preheat the oven to 375 degrees F.
  • Add the strawberries, granulated sugar, cornstarch and lime zest and juice to a bowl. Toss to combine and set aside.
  • For the crust and crumble: In a food processor, combine the flour, butter, brown sugar and baking powder. Pulse until a loose crumb forms; continue to pulse as you add the cream.
  • Grease a 9-by-13-inch pan with butter. Dump two-thirds of the flour mixture onto the prepared pan and press flat. Top with the strawberry mixture, spreading it into an even layer. Sprinkle over the remaining flour mixture, followed by the turbinado sugar.
  • Bake the bars until the top is golden and the strawberry layer is thick and bubbling, 28 to 30 minutes. Remove and allow to cool.
  • For the icing: Whisk together the powdered sugar and lime juice until smooth.
  • Cut the cobbler into small squares and drizzle with the icing. Add to a platter and serve.

Steps:

  • Preheat your oven 350°F.
  • Combine flour and sugar.
  • Cut in the butter until crumbly.
  • Press into 8-inch square baking tin.
  • Bake until a very light golden colour about 15 to 20 minutes.
  • In a medium saucepot place two cups crushed fresh or thawed strawberries.
  • Add 1/2 cup white sugar, and bring to a boil.
  • Remove from heat; add Jello powder and stir well until dissolved.
  • Chill until slightly thickened.
  • Prepare Dream Whip dessert topping according to the package directions using the 1/2 cup milk and teaspoons vanilla which it calls for.
  • Fold half of the prepared Dream Whip into the slightly thickened strawberry mixture and pour into cooled crust.
  • Chill in fridge until set. (This should be about one hour or so).
  • Beat the icing sugar into the remaining dessert topping and spread over the set layer.
  • Chill until serving time.

  • Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.

Steps:

  • For the cookie crust: Line an 8-inch square baking pan with parchment, leaving about a 2-inch overhang on all sides.
  • Whisk together the cookie crumbs, sugar and melted butter in a medium bowl until combined. Press the cookie mixture into the bottom of the prepared pan. Refrigerate until firm, 45 to 60 minutes.
  • For the cheesecake filling: While the cookie crust chills, add the cream cheese, strawberries, sugar and vanilla to a blender. Blend mixture starting at low speed and bring it up to high until smooth. (If needed, use the tamper to push all the ingredients down towards the blades. This will ensure everything is blended evenly and smoothly.) Pour the mixture into a medium bowl. Add half of the whipped cream to the cream cheese mixture and gently fold in using a rubber spatula. Repeat with remaining whipped cream.
  • Pour the cheesecake filling over the chilled crust, spread and smooth with a spatula.
  • Freeze the cheesecake for at least 4 hours. Use the parchment overhang to remove cheesecake from the pan and use a hot knife to cut into 9 bars. Keep frozen and put in refrigerator for about 30 minutes before serving.
  • To serve the bars, place the whipped cream in a pastry bag fitted with a star tip. Pipe a rosette of whipped cream on top of each bar. Gently place the blueberries and strawberries on top of the whipped cream. Serve immediately.

  • Line a small baking sheet with parchment paper, wax paper or aluminum foil and set aside.
  • Place the white chocolate in a medium bowl and set aside. Place the heavy cream in a microwave-safe bowl and heat on high for 1 minute, or bring to a simmer in a small pot over low heat. Pour the hot heavy cream over the white chocolate and let sit, stirring occasionally, until the chocolate has melted, about 5 minutes.
  • Meanwhile, place the cookies and freeze-dried strawberries in a resealable plastic bag and gently crush with a rolling pin or skillet until everything is crushed and mostly gravel-sized (or crush toppings in a food processor). Place the toppings mixture in a large, shallow plate or baking dish along with the strawberry cereal.
  • Working with one ice cream bar at a time, pour the white ganache all over a bar. Use a butter knife to spread the ganache to fully coat. Lay the bar on the plate with the toppings, pressing gently to adhere. Flip the bar over and continue pressing in the toppings to fully cover the bar.
  • Place on the prepared baking sheet and immediately place in the freezer. Continue with the remaining bars and topping. Freeze the coated bars for at least 10 minutes before serving.

Steps:

  • Preheat oven 350°F.
  • In a bowl, mix up the 1/2 cup melted butter and graham cracker crumbs until there are no dry crumbs left. In a 9x13 pan, pat the graham cracker crumbs down firmly. Bake for 15 minutes.
  • Meanwhile as that is baking, In a large bowl whip up the cream cheese, add in sugar, maple syrup, 1/4 cup butter and vanilla. Add in one egg at a time and whip with electric hand mixer until all eggs are well blended.
  • Take the graham cracker crust out of the oven. Place and spread evenly the cream cheese mixture and bake for 1 hour. You will want to check 30 minutes in and 15 minutes after. At 40 minutes it looks done but the middle is still raw. Dont be afraid to have darker edges, you'll not burn the cheesecake.
  • Once the cheesecake filling is cooked. Chill for 3-5 hours. Then pour the pie filling over and spread evenly. Cut into squares once done!

Strawberry Oatmeal Breakfast Bars image

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x12-inch baking dish.
  • Remove the green tops from strawberries using the tip of small, sharp knife or strawberry huller. Place the berries cut-side down on a work surface and cut in half. Slice each half lengthwise 3 to 5 times before turning and cutting across in a nice, uniform dice.
  • Combine diced strawberries, lemon juice, sugar, and cornstarch in a mixing bowl and stir until thoroughly combined and the cornstarch disappears. Set aside until needed.
  • Combine oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ginger in a mixing bowl. Pour in melted butter and stir thoroughly until dry ingredients are evenly coated.

Strawberry Squares - South Beach Style image

Steps:

  • Preheat over to 350°F.
  • Spray a 8" by 8" (or 9" by 9") non-stick square pan lightly with cooking spray.
  • Mix the kashi, 2 teaspoons of splenda and sunflower oil and press evenly over the bottom of the pan.
  • Bake for 10 minutes then remove from oven and cool.
  • Mix the boiling water and the strawberry or raspberry Jello and stir until Jello is dissolved, put mixture in refrigerator until cool but not set.
  • Mix the jello mixture with the skim milk and add the vanilla pudding mix, beat until lump free then stir in the strawberries.
  • Pour the strawberry mixture over the cooled kashi crust, and spread to even out the strawberries.
  • Chill until well set, then if desired, spread ultra low fat cool whip evenly over the top.

1 cup skim milk
2 cups fresh strawberries, sliced and lightly sweetened to taste with

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Add enough ice to cold water to measure 1-1/2 cups. Add to gelatin; stir until ice is completely melted. Remove 1-1/2 cups gelatin; set aside on counter. Refrigerate remaining gelatin 30 min. or until slightly thickened.
  • Add 3/4 cup COOL WHIP to chilled thickened gelatin; whisk until well blended. Pour into 8-inch square dish. Refrigerate 15 min. or until gelatin mixture is set but not firm. Carefully pour reserved gelatin over creamy gelatin layer in dish.
  • Refrigerate 3 hours or until firm. Cut into squares; top with remaining COOL WHIP.

Frosty Strawberry Squares image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Line a rimmed baking sheet with aluminum foil. In a bowl, stir together the flour, brown sugar, walnuts and melted butter. Toast in the oven until walnuts are fragrant, about 15 minutes; stir occasionally. Sprinkle 2/3 of the walnut mixture evenly over the bottom of the 9x13 inch dish.
  • In a large bowl, whip the egg whites with the lemon juice until they can hold a soft peak. Gradually add white sugar while continuing to whip to firm peaks. Fold in the strawberries.
  • In a separate bowl, whip the cream with an electric mixer until stiff but not grainy. Fold into the strawberry mixture. Spoon over the crust in the dish and spread evenly. Top with the remaining walnut mixture. Freeze for 6 hours, or overnight.
