Believe it or not, the light bitterness of an American-style lager, like Budweiser, Coors or Miller High Life, transforms boxed cake mix into a sophisticated, yeasty dessert. For more flavor, it's topped with a beer syrup and glaze, and also cherries, cooked in even more beer. For a stronger beer flavor, use a dark ale, lager or IPA.

- Preheat the oven to 350 degrees F and spray a 10-cup plain Bundt pan with nonstick baking spray.
- Whisk the cake mix, oil, eggs and 1 cup beer in a large bowl until smooth and well-combined, at least 30 seconds. Pour the batter into the prepared pan, smoothing the top with a rubber spatula, then bake until a cake tester inserted in the center of the cake comes out clean, 45 to 50 minutes.
- Meanwhile, pour 2 tablespoons beer in a heatproof glass bowl and microwave until hot, about 30 seconds. Stir in 2 tablespoons granulated sugar until dissolved.
- Let the cake cool in the pan for 5 minutes, then invert it onto a cooling rack. Using a toothpick, poke several holes over the cake, then drizzle the beer syrup evenly over the cake until it soaks in. Let the cake cool completely.
- Stir the confectioners' sugar and 2 tablespoons beer together in a bowl until smooth. Add more beer, 1 teaspoon at a time, as needed to form a thick glaze. Drizzle the glaze evenly over the cake and let stand until set, about 10 minutes.
- Meanwhile, combine the remaining beer and 2 tablespoons granulated sugar with the cherries in a medium saucepan. Bring to a simmer over medium heat and cook, stirring, until the cherries are warmed through and the liquid is reduced to a thick syrup, about 10 minutes. Transfer the cherries to a bowl and let cool completely.
- Serve cake slices with the cherries on the side and a dollop of whipped cream, if using.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt cake pan.
- To make streusel: In a medium bowl, mix brown sugar, 3/4 cup flour, and cinnamon. Cut in the butter with a fork until crumbly. Stir in walnuts.
- In a medium bowl, stir together 3 1/4 cups flour, baking powder, and baking soda. In a large bowl, cream together the butter and sugar until light and fluffy. - Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
- While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
- Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
- Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

- Add beaten eggs and melted butter and mix it all together.

Steps:
- Preheat oven to 400°F.
- Mix flour, sugar, cardamom and baking powder together well.
- Cut in butter with a pastry blender or with two knives.
- Beat the egg. Add into flour mixture and mix well.
- Spread the batter into a greased and floured 8x11 pan.
- Spread lingonberry preserves over batter.
- Sprinkle streusel topping over lingonberry preserves.
- Bake for 25-30 minutes or until golden.
- Cool in pan before serving.

- Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9x12-inch baking dish.
- Mix brown sugar, pecans, butter, and flour together in a small bowl for streusel; set aside.
- Pour boiling water over oats in a bowl. Combine flour, baking powder, baking soda, and salt in a separate bowl.
- Cream brown sugar and butter in a large mixing bowl with an electric mixer until light and fluffy. Add eggs, 1 at a time, beating briefly after each addition. Scrape down the bowl and continue beating until mixture is smooth. Mix in oats, vanilla extract, and cinnamon. Stir in flour mixture with a rubber scraper or wooden spoon. Pour batter into the prepared baking dish and cover with streusel.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.

CRUMB CAKE OR COFFEE CAKE WITH EASY STREUSEL TOPPING
I never seem to have butter softened to the right temperature when I want to make coffee cake, so I finally asked my mom for her recipe, and it doesn't require any softened butter, just oil, so it is a breeze to make. It is easy to get the consistency of the crumb topping just right. You could substitute other types of nuts if you wanted.

- Mix sugars and oil.
- Add flour, baking soda, salt, and nutmeg. Mix well.
- Remove 6 tablespoons of mixture and reserve for crumb topping.
- Add egg and buttermilk to the larger portion of the mixture. Stir well. Put in 9X13.
- To reserved crumb mixture, add nuts to taste and cinnamon.
- Sprinkle over cake batter. Bake at 350 for 35-40 minutes. A toothpick inserted in the center should come out clean.
