CRUNCHY BAKED APPLES
We live in South Carolina's Piedmont area, which is famous for huge apple orchards. This is one of my family's favorite apple recipes. I almost always make this to top off our traditional Sunday dinner.

- Cut each apple in half along its equator. Using a melon baller, cut out each side of the core, creating a rounded hole. Rub exposed apple flesh with lemon juice. Place 1 tablespoon of jam into each hole. For the topping: in a small bowl mix together flour, butter, brown sugar, oats, cinnamon and salt. Press this mixture on the top of each apple, covering jam. Place in a baking dish filled with about a 1/4-inch of water. Bake until top is golden brown and apple is tender, about 35 to 40 minutes.
BAKED APPLES
This is sweet, crunchy, hot and cinnamonie. Is that a word? Go ahead and use your favorite choice of nuts. You can replace the rum with apple juice if you don't want the booze. But remember the alcohol will burn off. Ice cream goes sooooo well with the hot soft apples.

- Preheat oven to 375 degrees F. Combine brown sugar, walnuts, cornflakes, butter, and cinnamon in a medium bowl using a pastry cutter or fork.
- Use a small sharp knife and sturdy teaspoon to cut and scoop out the core of each apple. Be careful not to cut all the way through to the bottom or your filling will spill through.
- Place apples in a baking dish and spoon some of the filling down into the cavity of each apple where the core was. Use your finger or a spoon to press the filling down in, compacting it a bit, and pile more of the filling on top of each apple in a mound.
- Pour the apple juice or water into the baking dish, then bake for 35 to 45 minutes until the apples are tender and the filling is golden brown.
