Steps:
- Purée cucumbers with water, vinegar, and 2 teaspoons kosher salt in batches in a blender until smooth.
- Mash together avocado, lime juice, and remaining teaspoon kosher salt until smooth. Whisk in yogurt, wasabi paste, chives, and pepper to taste.
- Just before serving, blend soup with ice in batches until smooth. Serve topped with avocado cream.

Cucumber and avocado sushi! These rolls are easy to make and you can add either fake crab or smoked salmon. Serve with teriyaki or soy sauce and wasabi!

Steps:
- Combine the water and rice in a saucepan and bring to a boil. Cover, reduce heat to low and simmer for 20 minutes, or until rice is tender and water has been absorbed. Remove from the heat and stir in the vinegar and a pinch of salt. Set aside to cool.
- Cover a bamboo sushi mat with plastic wrap to keep the rice from sticking. Place a sheet of seaweed over the plastic. Use your hands to spread the rice evenly onto the sheet, leaving about 1/2 inch of seaweed empty at the bottom. Arrange strips of cucumber and avocado across the center of the rice. Lift the mat and roll over the vegetables once and press down. Unroll, then roll again towards the exposed end of the seaweed sheet to make a long roll. You may moisten with a little water to help seal. Set aside and continue with remaining nori sheets, rice and fillings.
- Use a sharp wet knife to slice the rolls into 5 or 6 slices. Serve cut side up with your favorite sushi condiments.

- Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
- Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
- Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
- Cover bowl with plastic wrap and refrigerate at least 2 hours.

AVOCADO-CUCUMBER SOUP
This simple but elegant soup graced the table at one of the monthly luncheons held by the Thursday Afternoon Cooking Club, an organization of Wichita, Kan., women that has been meeting since 1894. Each month, the 24 women of the club gather over their best tableware to share recipes and cooking tips. English cucumbers work well for this recipe, but cucumbers fresh from the garden are a great choice if you have them. The soup could also be blended and served chilled in small cups and passed around on a tray for a cocktail party.

- Reduce heat to low and let simmer about 5 minutes.

- About twenty minutes before you want to start working, set the cream cheese out on the counter to soften. (You can skip this step, if necessary, but it will mean a bit more effort in the next step, mixing the cream cheese with the wasabi.)
- When the cream cheese is softened, combine the wasabi powder and water to make a smooth paste. Mix the cream cheese in with the wasabi paste until it is combined.
- Wash the cucumbers well and then peel them lengthwise in alternating strips.
- Slice the cucumbers into disks about an eighth to a quarter inch thick.
- Top each cucumber slice with a fold of smoked salmon.
- Put a ½ tsp. of cream cheese atop the salmon.
- Secure each appetizer with a toothpick.
- Serve on a tray.
- Note: Takes a half hour of active labor plus about twenty minutes to soften the cream cheese.

- Cut the cucumber lengthways into four and scoop out the seeds.
- Depending on preference, slice each quarter lengthways into thick or thin strips.
- On your work bench lay out a sushi mat or cling film (you can also roll by hand - which i find much easier).
- Place a sheet of nori on your workspace shiny side down.
- Put a layer of rice on your nori leaving a gap of approx 1 inch around the sides. (how much or how little rice you put on depends on your personal preference, just beware! your roll may end up morbidly obese instead of just fat).
- On the side closest to you put a line of wasabi paste on the rice - use your finger to do this.
- Place the cucumber strips on top of the wasabi.
- Fold the nori "lip" nearest to you over and begin rolling up the sushi like a swiss roll. Everybody rolls sushi in a different way, find what works best for you.
- Gently wet the last "lip" of the nori and stick it to the outside of the rolled log.
- Roll log onto its seam and leave for a few minutes.
- Dip a sharp knife into cold water and allow the excess to drp off but do not dry.
- Slice the log into pieces, I like a 1/2 inch slice personally. Make sure you dip and drip between each cut.
- Arrange on a plate and serve with either shoyu or tzatziki.

- Cut 5 cucumbers in to 3" chunks.
- Place half in a food processor or blender with 2 tablespoons of honey and process until smooth.
- Pour mixture through a cheesecloth lined strainer into a bowl.
- Puree remaining chunks of cucumber, (without honey), and strain through cheesecloth into same bowl.
- Peel, seed and thinly slice remaining cucumbers and place slices in a separate bowl.
- Add vinegar and remaining 2 tablespoons of honey and toss to coat.
- Cover and chill both bowls of cucumber for at least 8 hours.
- Using a fine-mesh strainer and the back of a spoon, squeeze the juice from pureed cucumber mixture. Discard the solids.
- Place half the marinated cucumber slices, avocado and 1 and 3/4 cups cucumber juice in blender or food processor and process until smooth.
- Repeat with remaining cucumber slices and 1 and 3/4 cups of juice. Reserver any remaining juice for another use, if desired.
- Stir in chopped dill, salt and pepper.
- Spoon into serving bowls and garnish with cracked black pepper and dill sprigs if desired.
