- Preheat the oven to 400 degrees F.
- Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
- In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.
BACON-WRAPPED WATER CHESTNUTS
Soy sauce, smoky bacon and sweet brown sugar dress up water chestnuts for a festive party appetizer. The crunchy centers are a great counter to the crisp, meaty bacon and the sticky-sweet glaze.

- Combine the water chestnuts and soy sauce in a resealable plastic bag and let marinate at room temperature, tossing and massaging the bag occasionally, for 30 minutes.
- Preheat the oven to 400 degrees F. Wrap each water chestnut in a piece of bacon and secure with a toothpick. Set a cooling rack into a rimmed baking sheet and arrange the bacon-wrapped water chestnuts on top. Bake until the bacon renders its fat and is crisp, about 30 minutes.
- Meanwhile, stir together the ketchup, brown sugar, Worcestershire sauce and 1/3 cup water in a bowl to make a sauce.
- Remove the baking sheet from the oven and carefully lift the cooling rack off the baking sheet. Drain away any fat in the baking sheet and wipe dry with paper towels. Line the baking sheet with foil and lightly spray the foil with nonstick cooking spray. Carefully transfer the bacon-wrapped water chestnuts to the bowl with the sauce, swirling to fully coat, then spread out on the baking sheet.
- Return the baking sheet to the oven and bake, tossing every few minutes, until the sauce is reduced to a sticky glaze, about 15 minutes. Immediately transfer the bacon-wrapped water chestnuts to a warm serving platter. Sprinkle with pepper and serve while hot.
BACON-WRAPPED WATER CHESTNUTS
Even though this is a very old recipe, I thought it might be something new to the "young whipper-snappers" who have recently joined Zaar. It was always a popular appetizer.

- Marinate the water chestnuts in soy sauce for 1 hour.
- Drain.
- Roll each chestnut in the brown sugar.
- Wrap each chestnut with a piece of bacon.
- Secure with a toothpick.
- Arrange on a cake rack in a shallow baking pan.
- Bake at 400 degrees F for about 30 minutes or until golden brown.
- Drain on paper towels.
- NOTE: This can be prepared ahead of time and stored in refrigerator until ready to bake.

- Preheat oven to 375 degrees F (190 degrees C).
- In a medium-size mixing bowl, combine brown sugar, Worcestershire sauce, and ketchup.
- Cut bacon in half. Wrap one slice of bacon around each chestnut. Secure the bacon with a toothpick. Arrange the water chestnut wraps in a 9x13 inch baking dish.
- Bake the water chestnut wraps for 10 to 15 minutes.
- Remove from water chestnut wraps from the oven and drain some of the grease out of the pan. Pour the sauce over the wraps.
- Bake for 30 to 35 more minutes.

- In a medium bowl, combine 1 tablespoon of the yeast with 3/4 cup of the warm milk and stir to dissolve the yeast. Add 3/4 cup of the flour and stir to create a smooth paste. Cover the bowl with plastic wrap and let the flour mixture rest in a warm place for 30 minutes.
- Once 30 minutes have passed, in the bowl of a stand mixer fitted with the paddle attachment, combine the remaining 1 teaspoon yeast with the remaining 1/4 cup milk (the milk will be room temperature at this point). Add the rested flour mixture along with the vanilla and egg yolks and mix on low until the ingredients are incorporated and the dough is smooth, about 30 seconds. Turn off the mixer and add 1 cup of flour, along with the sugar and salt. Mix on medium until the dough starts to come together, about 30 seconds. Add the butter and mix on medium until it's incorporated, about 30 seconds.
- Remove the paddle attachment from the mixer, and switch to the dough hook. Start adding the remaining flour, 1/4 cup at a time (turning the mixer off for each addition) and knead the dough on medium until it completely pulls away from the side of the bowl and is smooth and not too sticky, about 1 minute. The dough will be very soft and moist but not so sticky that you can't roll it out. (For this step, you may only need to use as little as 1/4 cup flour, so there may be flour leftover.) Cover the bowl with plastic wrap and let the dough rest in a warm place for 30 minutes.
- Once 30 minutes have passed, gently press down on the dough to remove any gas bubbles then chill, covered, for at least 1 hour and up to 12 hours.
- When ready to roll out the dough, line a baking sheet with a lightly floured non-terry towel. Lightly flour a work surface and roll out the dough to a 1/2-inch thickness. Using doughnut or cookie cutters, cut out 3-inch-diameter rounds with 1-inch-diameter holes. (For filled doughnuts, don't cut out the holes.) Arrange the doughnuts on the prepared baking sheet, leaving at least 1 inch between doughnuts. Cover the doughnuts loosely with plastic wrap and let them proof in a warm place until almost doubled in size, 30 to 40 minutes. Check to see if the doughnuts are ready every 5 to 10 minutes. To test, use a fingertip to lightly touch one of the doughnuts. If the dough springs back immediately, it needs more time; if it springs back slowly, it's ready; and if the dough doesn't spring back at all, it's over-proofed. You can punch down and reroll over-proofed dough once.
- While the doughnuts are proofing, line a baking sheet with 2 layers of paper towels and place a wire rack on top of the towels. In a heavy-bottomed large pot or deep fryer, heat at least 2 inches of oil until a deep-fry thermometer registers 360°F. Working in batches, use a slotted metal spoon or spatula to carefully place the doughnuts in the hot oil. Fry, flipping once, until light golden brown, 1 to 2 minutes per side. Transfer as done to the wire rack and return the oil to 360°F between batches. Let the doughnuts cool slightly before glazing with the Basic Sugar Glaze or Chocolate Glaze .
SPICY BACON-WRAPPED WATER CHESTNUTS II

- Preheat oven to 350 degrees F (175 degrees C).
- Cut each strip of bacon in half. Wrap one strip around one water chestnut. Secure with a wooden toothpick. Place in shallow baking dish.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.
- While the wraps are baking, in a small mixing bowl combine brown sugar, mayonnaise, and chili sauce to make barbecue sauce. After the wraps have finished baking, transfer them (removing them from the grease) to a second shallow baking dish. Pour the sauce over the wraps.
- Bake at 350 degrees F (175 degrees C) for 10 to 15 additional minutes, or until bacon is crispy. Serve hot out of dish with toothpicks.

- Preheat the oven to 325 degrees F. Line two rimmed baking sheets with parchment.
- Pat the bacon dry. Mix the brown sugar, chile powder, black pepper and cayenne together and spread out on a large plate. Press both sides of each bacon strip into the sugar mixture until coated and then arrange on the prepared baking sheets. Sprinkle with any remaining sugar mixture.

SPICY KETCHUP GLAZED BACON-WRAPPED WATER CHESTNUTS
These will be a huge hit at your party! the recipe may be doubled or tripled, you may wrap all the chestnuts hours in advance and refrigerate until ready to bake --- try to purchase the thin sliced bacon for this then slice each strip into three pieces --- I use the Heinz spicy ketchup, if you cannot find the spicy ketchup just add in some cayenne pepper, also try to purchase the thicker long toothpicks :)

- Set oven to 350 degrees F.
- Grease a 13 x 9-inch baking dish.
- In a small saucepan over low heat; cook the spicy ketchup with the brown sugar, stirring until no sugar granules remain; set aside (this can be done up to a day in advance).
- Dry each water chestnut using a paper towel.
- Wrap one small slice of bacon tightly around each water chestnut, then secure with a toothpick.
- Place into baking dish.
- Lightly cover the dish with foil.
- Bake for about 35-40 minutes or just until the bacon is crispy.
- If desired you may bake uncovered for a couple of minutes just to crisp up the bacon more.
- Remove from oven and drain the fat/grease.
- Drizzle the prepared sauce mixture over each chestnut, return to oven and bake uncovered for about 8-10 minutes more.

- Mix soy sauce and brown sugar.
- Place drained waterchestnuts into soy sauce/brown sugar mixture.
- I will put this all into a ziplock bag or a container with a lid so I can"turn or roll" them about every half hour, making sure the sauce stays well mixed and waterchestnuts are getting well coated.
- Place into fridge and let sit for 2 hours, minimum.
- After a minimum of 2 hours, Cut bacon in half.
- Wrap a waterchestnut with piece of bacon and stick with toothpick to hold in place.
- Place wrapped waterchestnuts in shallow baking dish.
- After all are wrapped, drizzle just a little bit of the soy sauce/brown sugar mixture over the wrapped chestnuts.
- Bake at 375 degrees until bacon looks"crisp," usually about 20 minutes or so.
