CREAM OF PATTY PAN SQUASH AND SWEET CORN SOUP

Vegan, salt-free, oil-free, gluten-free, dairy-free soup. These cute little patty pan squash grow so quickly and are plentiful on the vines. I'm always looking for ways to incorporate them into our meals but also to highlight how unique, creamy, and flavorful they are. This soup is both nutritious and delicious. A family favorite! Serve with a pinch of cayenne or paprika (if you like milder) and green onions.

Cream of Patty Pan Squash and Sweet Corn Soup image

Steps:

  • Place dried navy beans into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain.
  • Heat 2 to 3 tablespoons of water in a pot over medium-high heat. Add onion and cook until translucent, about 5 minutes. Add garlic and more water if necessary; saute for 2 minutes. Add vegetable broth, pre-soaked beans, curry powder, lemon balm, white pepper, and cayenne; bring to a boil.
  • Reduce heat to medium-low and simmer until beans are nearly tender, about 1 hour. Add squash to the simmering beans and bring back to a very slow boil. Simmer until squash and beans are tender, about 30 minutes more. Allow to cool slightly; use an immersion blender or transfer to a blender to blend until soup is smooth and creamy.
  • Add corn to the pot and adjust seasoning as necessary. Heat to a slow boil and then reduce to a simmer. Continue to simmer until corn is tender, about 10 minutes.

  • Heat the oil in a skillet over medium-high heat, and cook the onion and garlic until slightly tender. Mix in the vegetable broth and corn kernels, and cook until heated through. Mix in the squash and zucchini. Cover, and continue cooking 10 minutes, stirring occasionally, until squash and zucchini are tender.
  • Mix the parsley and butter into the skillet with the squash. Season with salt and pepper. Cook and stir until butter is melted, and serve hot.

Steps:

  • Mix cornmeal and 1/4 teaspoon cayenne in small bowl. Add okra and toss lightly to coat. Pour okra into sieve and shake off excess cornmeal.

Steps:

  • Heat olive oil in a large frying pan on low.
  • Add squash and spices.
  • Stir-cook on low for three minutes and then add water.
  • Cover pan and increase heat to level six.
  • Allow to steam for ten minutes.
  • Remove from heat and blend contents of pan in a food processor with 1/2 quart of skim milk.
  • Pour food processor mixture into a pot and add Splenda brown sugar blend.
  • Heat to level 6 while stirring in the remaining skim milk. (The amount of milk added is variable to desired texture.).
  • Cover and simmer on level 4 for 15 minutes.
  • If serving warm, ladle soup into bowls and garnish with crushed walnuts and cinnamon. (An alternative is to use more Splenda Brown Sugar Blend).
  • If serving cold, refrigerate for 2 hours and then follow previous instructions.

Steps:

  • Before shredding, cut out the stem of the squash, but there's no need to peel it.
  • If the squash is large, more than 4 inches across, you may wish to cut out the bigger seeds.
  • Preheat about 1/2 inch oil over medium-high heat in a deep skillet.
  • Beat the eggs, milk and oil into the squash in a large bowl, then add the flour, baking powder and salt and mix until combined with a few strokes.
  • Drop tablespoons of batter into hot oil-- in a big skillet, you can cook up to 8 at a time.
  • Cook until brown, turn with a spatula and cook the other side until brown.
  • Drain on newspaper or other suitable draining surface.
  • Serve with horseradish sauce, ketchup or whatever catches your fancy.

  • Cut summer squash crosswise into 1/2-inch-thick slices. Shuck corn and, working over a bowl, cut kernels from cobs. Halve cobs. Chop shallots and mince garlic. Wearing rubber gloves, chop chile, with seeds if desired.
  • In a 5-quart heavy kettle combine all ingredients (including cobs) except water and cook over moderate heat, stirring, 3 minutes. Stir in water and simmer mixture until squash is very tender, about 15 minutes. Discard cobs.
