Steps:

  • Marinate salmon:,
  • Stir together mirin, soy sauce, vinegar, and ginger in a shallow dish. Add fish, skin sides up, and marinate, covered, at room temperature 10 minutes.
  • Preheat broiler.
  • Make sauces:
  • Boil soy sauce, honey, and lime juice in a small saucepan, stirring frequently, until thickened, about 4 minutes.
  • Stir together wasabi powder and water in a small bowl.
  • Broil fish, skin sides down, on oiled rack of a broiler pan 5 to 7 inches from heat until fish is just cooked through, about 6 minutes.
  • Serve salmon drizzled with sauces.

For salmon

  • Sprinkle over salmon, cover and refrigerate 1-2 hours.

  • Preheat broiler or grill.
  • Combine soy sauce and 1/2 tsp wasabi paste; mix well. Spoon mixture over salmon with skin side down. Place salmon, skin side down, on grill over medium heat or rack of broiler pan.
  • Grill or broil 4 to 5 inhces from heat source for about 8 minutes. Salmon should be flakey.

Leftovers: Wasabi Salmon Salad Sandwich with Taro Chips image

Steps:

  • Preheat a deep fryer to 275 degrees F. In a bowl, mix together the Wasabi Aioli, salmon and celery. Check for seasoning. Build the sandwiches on the bread and top with the tomato and lettuce. Slice on the bias. Fry chips until golden brown and crisp. Season lightly with salt.
  • Plating: Serve sandwich with taro chips.
  • In a food processor, add wasabi paste, garlic, ginger, vinegar and yolks. While processor is on, drizzle in oil, slowly at first until it emulsifies then more quickly. Check for seasoning. Store in refrigerator.
  • In a salmon poacher or large sauce pot, mix the sake, celery, carrot, onion, sugar, bay leaves, peppercorns, soy sauce and water to cover. Add the seasoned salmon and slowly bring the liquid to a simmer. Simmer for 3 minutes then turn off the heat. Let stand for 5 to 10 minutes depending on doneness desired. I prefer medium rare (5 minutes). In a blender, add ponzu, shallots, 1/2 tablespoon togarashi, soy and sugar. Blend on high speed and drizzle in the oil. Season with salt and pepper. In a large bowl, mix together fennel, somen and scallions and toss with enough vinaigrette to coat the salad. There will be some left over for plating. Check for seasoning.
  • Plating: On a large plate, place a mound of the salad and top with hot salmon. Drizzle on a little of the vinaigrette and garnish with remaining togarashi and fennel fronds.

  • Heat oven to 425. Line a shallow baking pan with foil.
  • In a small bowl, toss panko crumbs, chopped almonds and 2 tsp oil.

Pan-seared Salmon served with Wasabi Mashed Potatoes image

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the salmon with salt and pepper. In a large saute pan, over high heat, add the olive oil. Pan-sear the salmon fillets until golden on both sides, about 2 minutes on each side. Transfer to a preheated oven and continue to cook until medium done.
  • Serve over a bed of Wasabi Mashed Potato, with half of the Miso and Plum Sauce drizzled over and with Cilantro and Mint Vinaigrette. Garnish with julienned green onions and sprigs of cilantro.
  • In a blender or food processor, process the spinach and watercress to a fine puree. Pass through a tamis or stainer. Reserve.
  • Cook the potatoes in salted, boiling water until done. Pass through a ricer. Whisk in hot heavy cream and butter, 1 small piece at a time. Just before serving, stir in wasabi paste and puree of spinach and watercress. Stir until well incorporated. Season, to taste, with salt and pepper.
  • In a medium saucepan, heat the peanut oil. Over medium heat, add the garlic, shallots, ginger and green onions and saute until glossy and lightly browned, about 5 minutes. Stir in star anise and black peppercorns. Continue to saute until aromatic, about 1 to 2 minutes.
  • Deglaze with the plum, port and red wines. Reduce until only about 1 cup of liquid remains. Add the lamb demi-glace and chicken stock. Bring to a boil and lower to a simmer. Continue to simmer until slightly thickened. Stir in the raspberry puree, red miso paste and neriume. Continue to reduce until glossy.
  • Stir in the butter. Season, to taste, with salt and pepper. If too tart, add a pinch of sugar. Strain through a chinois and keep warm until needed.
  • In a small bowl combine the mustard powder and the water and stir to make a paste and set aside. In a blender, combine the cilantro, mint, egg yolk, peanuts, cashews, lemon juice, pickled ginger, vinegar and reconstituted mustard. Process to a puree. While the motor is running, slowly add the peanut oil until emulsified. Season to taste with salt, pepper, and sugar. Refrigerate until needed. Use half of the vinaigrette for the lamb and reserve half for the salmon.

Wasabi and Salmon Cucumber Appetizers image

Steps:

  • About twenty minutes before you want to start working, set the cream cheese out on the counter to soften. (You can skip this step, if necessary, but it will mean a bit more effort in the next step, mixing the cream cheese with the wasabi.)
  • When the cream cheese is softened, combine the wasabi powder and water to make a smooth paste. Mix the cream cheese in with the wasabi paste until it is combined.
  • Wash the cucumbers well and then peel them lengthwise in alternating strips.
  • Slice the cucumbers into disks about an eighth to a quarter inch thick.
  • Top each cucumber slice with a fold of smoked salmon.
  • Put a ½ tsp. of cream cheese atop the salmon.
  • Secure each appetizer with a toothpick.
  • Serve on a tray.
  • Note: Takes a half hour of active labor plus about twenty minutes to soften the cream cheese.

Salmon Fillets with a Wasabi Coating image

Steps:

  • In a saucepan, cook the wild rice (two parts water to one part rice) by boiling for 45 minutes. Leave to the side to cool.
  • Meanwhile, in another saucepan, cover the beet with water; bring to a boil, then reduce the heat and simmer for about 30 minutes, until the beet is tender. Drain, and when cool enough to handle, peel off the skin and cut the beet into coarse chunks.
  • Chop the pomegranate in half and extract the seeds. Add the pomegranate, beet, olive oil, and mint to the rice. Leave to the side.
  • Make the wasabi coating by mixing together the mayonnaise, cumin, and wasabi. Taste and adjust if you want. Preheat the oven to 350°F/180°C.
  • Wash and dry the salmon, and season. Heat a griddle or ovenproof frying pan big enough to fit both salmon fillets and, when it is searing hot, drop in the salmon, skin-side down. Turn after 5 minutes or when the skin is brown and crispy. Take off the heat, carefully turn again, and spoon the wasabi coating onto the top of the salmon. Put the pan into the oven and cook for around 10 minutes, until the coating begins to brown. Serve on the wild rice.

  • Preheat oven to 400°F. Blend wasabi peas in processor until ground but with some coarsely crushed pieces. Lightly oil rimmed baking sheet. Steps:

  • Mush the top ingredients together in a big bowl; Adding extra breadcrumbs till the texture is workable.
  • Roll into balls and flatten into patties.
  • Press the patties into the extra breadcrumbs.
  • Spray tops with Pam, flip and spray bottoms.
  • Cook in large skillet over medium-high heat until nice and brown and firm to the touch.
  • You can use the same technique with Tuna.
  • I like that to have an italian flavor, so I take out the wasabi and soy and add basil and oregano and shredded mozzarella.
  • They are great with pasta sauce.

Wasabi Salmon with Miso-Sesame Sauce image

Steps:

  • In a small bowl, combine miso paste, soy milk, and sesame seeds. Stir until the miso is completely dissolved. Set aside.
  • Combine ginger, cayenne pepper, sake, tamari, and wasabi in a zippered plastic bag; blend well. Add salmon; seal and toss to coat. Marinate for 1 hour.
  • Preheat oven to 400 degrees. Place salmon on a greased baking sheet, discarding marinade. Bake until fish flakes easily with a fork, about 13 minutes.
  • Remove salmon. Transfer to a warm serving plate. Drizzle miso sauce over fillets. Garnish with flowers. Serve warm.
