DELICIOUS AND EASY CORN ON THE COB
I learned this from a shopper in Stockbridge, Massachusetts when I was young. I have used this for 40 years and it has never failed to produce the most wonderful corn on the cob.

- Bring a large pot of water to a boil. Stir sugar into water to dissolve; add corn, cover pot, and turn heat off, leaving pot on hot burner.
- Steep corn in hot water until tender, about 25 minutes.

CRAZY EASY CORN (ON THE COB)
Corn on the cob barbecued to sweet perfection in it's own husk. Non corn enjoyers have loved this tasty recipe. Try serving with recipe#369273 for a great BBQ'd feast!

Steps:
- - Pull husks down without removing them. Pull off the silk and throw out. Stand corn up in a bowl cover the pulled down husks and soak in water for 10-15 minutes.
- - Hold the cob at the end and spread 1 tablespoon of garlic butter (each cob), sprinkle with salt and pepper.
- - Pull husks back up over cob.
- - Roll each cob in a sheet of foil twisting on the ends.
- - BBQ or Bake (in oven place on a baking sheet) 350 degrees for 20-25 minutes (turning every 5 minutes).
- - Remove foil and husks, discard and enjoy.
- *All steps can be done ahead of time up to cooking (refrigerate until ready to cook). This is a great time saver for camping, company or just because.
- *Depending on your taste you could also sprinkle on a small amount of cumin OR smoked chili powder.

CRAZY CORN
Corn-on-the Cob with a twist. Was given to my family from a friend who was from El-Salvidor. We love it and eat it all the time.

Steps:
- Boil a pot of water. While waiting for water to boil husk the corn. Cook corn for at least 20 minutes. Allow to cool for a minute or two. When ready to serve take a butter knife and spread on Mayo, then mustard and sprinkle with cheese. Use your own judgement.
EASY (BETTER THAN BOILED) CORN ON THE COB

- Microwave on high for 4 minutes per ear.

CORN ON THE COB WITH SHALLOT-THYME BUTTER

- Melt 2 tablespoons butter in heavy small skillet over medium heat. Add shallots and sauté until brown, about 4 minutes. Cool. Combine remaining 6 tablespoons butter and thyme in small bowl. Add shallot mixture and blend well. Season to taste with salt and pepper. (Butter can be prepared 2 days ahead. Cover and refrigerate. Bring to room temperature before serving.)
- Prepare barbecue (medium-high heat). Brush corn with olive oil. Grill corn away from direct heat until just cooked and beginning to brown in a few places, turning frequently, about 10 minutes. Alternatively, omit brushing corn with olive oil and cook in large pot of boiling salted water until tender, about 6 minutes, drain. Serve corn with shallot-thyme butter.
CHEESY CORN ON THE COB
An ideal accompaniment to a barbecued steak, these cheesy, buttery corn cobs are lightly charred and sprinkled with Parmesan (or a veggie alternative)

- Bring a large saucepan of salted water to the boil. Plunge in the corn cobs and cook for 5 mins until slightly tender, then drain. Can be done a day ahead - put the corn in a roasting tin, cover and chill until needed.
- Season the corn, put on a hot barbecue and cook for 5 mins, turning regularly until it begins to blister and some of the kernels have popped and charred in places. Alternatively, heat a griddle pan over a high heat and griddle the corn for 4-5 mins each side for a similar effect.
- Brush on all sides with the melted butter, then scatter over the Parmesan and some black pepper.

- Bring a large pot of water to a boil and gently place ears of corn into the boiling water. Reduce heat to low and simmer until corn is very tender, 20 to 25 minutes.
- Remove an ear of corn with tongs and spread about 1 tablespoon of mayonnaise all over the kernels.
